Orange Chicken Piccata

Ingredients

  • 2 (4 oz ea) bonelss, skinless chicken breasts cut into cubes
  • 3-4 small shallots, minced
  • 3 cloves of garlic, minced
  • 4 T. flour (use coconut flour to make it Paleo)
  • 1 cup chicken broth
  • 1/2 cup 100% orange juice
  • 1/4 cup capers (drained)
  • juice and zest of one large orange
  • 4 servings of linguine (I used DeCio Pasta - Szechnan Orange Spice http://www.deciopasta.com/) - optional

Preparation

Step 1

In a large skillet over medium high heat add 2-3 tbsp of olive oil, garlic, and shallots. Once they begin to brown, add chicken. Season with a little salt and some pepper and cook until it browns (6-8 minutes). In the corner of the pan, add the flour and mix with oil and juices to create a rue. Stir into chicken then add broth, orange juice and juice and zest of the orange. Stir until liquid comes to boil and begins to thicken. Add capers and stir. Serve over linguine if desired.
