- 1 C brown sugar
- 1 C crushed pineapple
- 3 eggs, separated
- 1 C sugar
- 1 C flour
- 1 t baking powder
- 1 t vanilla

Grilled Plum & Prosciutto Stuffed Pork Chops

- 4 pitted dried plums, halved
- 2 slices prosciutto, halved
- 1/2 t crushed fennel seeds
- 1/2 t paprika
- 1/2 t chopped sage
- 1/2 t chopped rosemary
- 1/4 kosher salt
- 1/4 t crushed red pepper

- 4 4oz. boneless center-cut loin pork chops
- Cooking spray
- 2 t balsamic vinegar
- 2 t molasses

Combine oil, vinegar, mustard, garlic, dill, salt & pepper
- 1/3 C olive oil
- 1/4 c vinegar
- 1 T Dijon mustard
- 1 clove minced garlic
- 1/2 t dill weed
- Salt & pepper
- 2 qts. torn spinach
- 3 kiwis
- 1 tomato, cut in wedges
- 1 C red onion slices
- 1 C crumbled feta cheese (optional)

Shrimp with Grapefruit, Avocado, Fennel & Jalapeño Vinaigrette

Preheat grill to med. Bring small pot of water to boil
- 2 sliced jalapenos
- 1/2 med sliced carrot
- 1/2 med white onion, sliced
- 3 cloves minced garlic
- 1/2 C rice wine vinegar
- 1 lb. shrimp
- 1/4 C olive oil
- 1 grapefruit, peeled & pith discarded
- 1 fennel bulb, thinly sliced
- 1 small red onion, thinly sliced
- 1/2 C mint leaves
- 1 avocado, sliced
Easy London Broil

- 1 C white long grain rice
- 1 t kosher salt
- 1/4 ground pepper
- 2 C water
- 1 T lime zest
- 2 T lime juice

- 1/2 onion, minced

- 2 large lobster tails
- 4 T butter
- 2 cloves thinly sliced garlic
- 3 T julienned fresh ginger
- 2 jalapeno, thinly sliced
- 3 1/2 oz. pea shoots or watercress
- 1/2 C finely shredded basil leaves
- Lemon wedges for serving
Black Bean & Chorizo Chiles

- 8 Anaheim or poblano peppers
- 1 T olive oil
- 1 med. coarsely chopped onion
- 1/2 t. oregano
- 1.2 t. salt
- 1.4 t. cumin
- 1/2 lb. coarsely chopped chorizo
- 15 oz. can black beans, rinsed & drained
- 2 T tomato paste
- 1/2 C water
- Creme fraiche or sour cream
