- 4 C diced, cooked potatoes
- 3 packets Gero Washington Rich Brown Seasoning
- 3 T olive
- 1 1/2 T cider vinegar
- 1 C diced celery
- 3 T diced onion
- 3/4 C mayonnaise Cook

In saucepan, cook onions over low heat with butter & sugar until carmelized, 30 min
- 2 med. white onions, minced
- 6 T butter
- 2/3 C sugar
- 3/4 C + 1/3 C red wine
- 3/4 raspberry vinegar
- Salt
- 8 pork tenderloin medallions
- 1 t. minced rosemary
- Salt & pepper
- 8 thin slices pancetta
- 2 T olive oil
- 8 garlic cloves
- 1/4 C balsamic vinegar
- 1 1/2 C beef stock
Lemony Herb ed Ricotta & Roasted tomato Appetizer

- 1 pint cherry tomatoes
- 1 T olive oil
- 1/4 t. & 1/4 t. sugar
- 2 T chopped basil
- 1 T thyme leaves
- 1 T chopped oregano
- 1 t. grated lemon rind
- 1 T lemon juice
- 3/4 C ricotta

Spicy Orange & Jicama Salad

- 6 small navel oranges
- 1 small thinly sliced red onion
- 1 C Jicama sticks
- 1/2 coarsely chopped cilantro

Roasted Salmon with Thyme & Honey Mustard Glaze

- 10 thyme sprigs
- 1 Salmon filet, 3 lbs
- 1/4 C Dijon mustard
- 2 T honey
- 1 tsp. white wine vinegar
- 2 tsp. thyme leaves
- 1 tsp Koshersalt
- 1/2 tsp. pepper
- 1 thinly sliced lemon
Lemon Rosemary Salmon Piccata

- 2 salmon filets
- 1 C flour
- 2 T butter
- 2 T olive oil
- 4 cloves minced garlic
- 1/3 C white wine
- 1 C chicken stock
- 3-4 T lemon juice
- 1 t cornstarch
- 3 T capers
- 1/2 C heavy cream
- 2-4 T chopped rosemary
- Lemon slices for garnish
Risotto Style Pasta with Caramelized Onions

Chicken Sate with Peanut Sauce
