Vegetable Quesadillas

In large skillet, heat oil over med heat
- Begin by preparing quick cooking brown rice and a simple salad of tomatoes & avocado
- 1/2 t olive oil
- 1/2 C diced red onion
- 1 t minced jalapeno pepper
- 1 clove minced garlic
- 1/2 med. tomato, chopped
- 1 sliced green onion
- 1 med. zucchini, chopped
- 1/2 C fresh corn kernels
- 1 t chopped cilantro
- ground pepper to taste
- 6 corn tortillas
- 1/2 C shredded cheddar or Monterey Jack

Marinated Pork Chops with Herb Salsa

In large bowl, whisk 1/4 C oil with lemon juice, rosemary & 2/3rds garlic; season with salt & pepper
- 1/4 C + 2 T olive oil
- 3 T lemon juice
- 1 T chopped rosemary
- 3 cloves minced garlic
- Ground pepper
- 6 5oz boneless pork rib chops
- 1 T capers
- 1 T Dijon mustard
- 1 T white wine vinegar
- 1 C flat leaf parsley
- 1/2 C basil
- 1/2 C mint

Pork Tenderloin with Olive-Mustard Tapenade

- 1 large roasted red bell pepper
- Salted water
- 6 oz penne pasta
- 2 C chopped arugula
- 1/4 C thinly sliced shallots
- 2 T red wine vinegar
- 1 T drained capers
- 1 T olive oil
- 1 8 oz can tuna, drained & flaked
Chinese Chicken Salad

In med saucepan, cover chicken breast with water & bring to sumer over mod hi heat
- 1 whole bone-in chicken breast
- 4 thinly sliced scallions
- one 1" piece ginger, thinly sliced + 1 1/2 t finely grated
- Salt
- 3 T EVOO + more for frying
- 8 wonton wrappers, cut into 1/3" strips
- 3 T seasoned rice wine vinegar
- 1 T sesame oil
- 2 t soy sauce
- Ground pepper
- 3/4 lb. baby bok chou
- 2 C mizuna
- 1 C mung bean sprouts
- 1 med. julienned carrot
- 1 T chopped cilantro
- 1/4 chopped roasted, salted peanuts
