Ingredients

  • 1/3 C olive oil
  • 1/4 c vinegar
  • 1 T Dijon mustard
  • 1 clove minced garlic
  • 1/2 t dill weed
  • Salt & pepper
  • 2 qts. torn spinach
  • 3 kiwis
  • 1 tomato, cut in wedges
  • 1 C red onion slices
  • 1 C crumbled feta cheese (optional)
  • 1 c croutons (optional)

Preparation

Step 1

Combine oil, vinegar, mustard, garlic, dill, salt & pepper. Place spinach in serving bowl. Peel & slice kiwis. add to spinach along with tomato, onion & feta. Toss with dressing and add croutons
