Spaghetti Squash with Indian Spices

Heat oven to 350. Have squash lengthwise & scoop out seeds
- 1 small spaghetti squash
- 1 T olive oil
- 1 t mustard seeds
- 3 T butter
- 1/2 C chopped yellow onion
- 2 t minced ginger
- 2 t chopped garlic
- 1 t cumin seeds
- 1/2 t coriander
- 1/2 C chopped tomato
- 1 small jalapeño, seeded & minced
- Salt
- 1/2 C coarsely chopped cilantro
Shrimp & Papaya Salad

Cook shrimp & plunge in ice water to cool; drain & pat dry
- 1 lb. shrimp
- 2 T olive oil
- 1 1/2 T lime juice
- 1/2 t lime zest
- 1 jalapeno, finely chopped
- Salt
- 1 seeded & chopped small papaya
- 1/2 sliced small red onion
- 1 rib celery, sliced diagonally
- 1 bunch watercress
- 1/2 C cilantro
- 1/4 C salted cashews, coarsely chopped
Green Beans with Lemon & Pine Nuts

- 1 1/2 lb green beans, cut into 1/2" diagonal pieces
- 1/4 C toasted pine nuts
- 2 T chopped Italian parsley
- 1 1/2 T grated lemon zest
- 4 t olive oil
Smoky Chickpea Dip

In med saucepan, cover chickpeas with 3" water & bring to boil
- 1/2 lb dried chickpeas, soaked overnight & drained
- 1 t cumin seeds
- 4 smashed garlic cloves
- 3 t lemon juice
- 1/4 hot pimenton or hot paprika
- 1/8 t cayenne
- 2 T olive oil
- 1 T olive oil with lemon
- salt
- 2 t chopped cilantro
- grilled bread or pitas for serving

- 1/2 t sambal oelek (ground chile paste) or hot sauce

- 1 lb peeled eggplant cut into 1/2" dice
- 1 med. tomato, cut into 1/2 dice
