Herbed Aruguala Tomato Salad with Chicken

Combine 1 T oil, rind, juice & chicken cutlets; let stand 5 min
- 3 T olive oil, divided
- 1 t grated lemon rind
- 1 T lemon juice
- 4 oz. chicken breast cutlets
- cooking spray
- 3/4 t salt, divided
- 1/2 t pepper, divided
- 2 C halved cherry tomatoes
- 1 5 oz. package baby arugula
- 1 1/2 T white wine vinegar
- 1 t herbes de Provence
- 1/2 t Dijon
- 1 clove minced garlic
- 3 T halved pitted kalamata olives
Citrus Flavored Shrimp & Arugula Salad

In bowl, combine vinegar, mustard, 1 T each lemon juice lime & orange juice
- 1 T white wine vinegar
- 2 t. mustard
- 2 T lemon juice, divided
- 1 T lime juice
- 2 T orange juice, pluse 2 oranges, peeled and sectioned into wedges
- Salt & pepper
- 1/2 C olive oil, divided
- 1 clove crushed garlic
- 16 shrimp
- 1/2 C white wine
- 1/2 C chopped parsley
- 2 bunches arugula
- 1 fennel bulb, trimmed & julienned
Grilled Tuna

Place tuna steaks in shallow dish
- 4 tuna steaks
- 1/2 t grated lemon juice
- 1/4 C lemon juice
- 1 clove minced garlic
- 1/2 C olive oil
- 1/8 t oregano
- Salt & pepper
Rosemary Chicken Salad

This salad makes a great sandwich served on thickly sliced country bread
- 1 T + 1t olive oil
- 1 1/4 lb. skinless, boneless chicken breasts
- Salt & pepper
- 1/4 C white wine
- 3 med. scallions, thinly sliced
- 1 celery rib, cut in 1/2" dice
- 1/2 med. red bell pepper cut in 1/2" dice
- 1/2 C mayonaisse
- 2 T lemon juice
- 1 clove minced garlic
- 1 t finely chopped rosemary
- 1/4 t Tabasco
- 1 med head boston lettuce
Beef Sirloin with Piquillo Peppers & Capers

In small bowl, mix paprika with sugar, 2 t salt & 1 t pepper
- 2 t sweet paprika
- 1 t dark brown sugar
- Kosher salt & pepper
- 1 1/2 lb. sirloin steak
- 1/4 C olive oil
- 3 thinly sliced garlic cloves
- 2 med. shallots, thinly sliced
- 1 T drained capers
- 1 t chopped fresh sage
- 8 piquillo peppers ( roasted Spanish peppers) seeded & chopped
- 1 t Dijon mustard
- 1/2 t Worcestershire sauce
Gâteau au fromage façon tiramisu

Avant de servir, râper du chocolat noir sur le gâteau au fromage
- 1 1 175 pqt (environ 175 g) de biscuits boudoirs
- 1/4 1/4 1/4 tasse de beurre, fondu
- 4 4 4 c. à soupe de Tia Maria
- 1 1 1 tasse de fromage à la crème
- 1 1 1 tasse de mascarpone
- 1 1 1 tasse de sucre
- 2 2 2 œufs
- 1/4 1/4 1/4 tasse de farine
- 1/8 1/8 1/8 tasse de chocolat noir
Kale Walnut Saute

Add kale to boiling water & cover; Blanch @ 2 min
- 2 bunches kale, trimmed & roughly chopped
- 2 T olive oil
- 2 cloves sliced garlic
- 1 large Spanish onion, thinly sliced
- 3/4 C roughly chopped toasted walnuts
- 1 chopped jalaeno
- 3/4 C chopped basil
- 1/4 C chopped mint
- 1 1/2 C pomegranate seeds
- 4 pork chops, grilled
Baked Eggplant & Zucchini

Very Good
- 2 C tomato sauce
- 1 small eggplant, cut in long slabs
- 2 small zucchini, cut in long slabs
- 1 C each shredded fontina & parmesan cheese
- 1/2 C basil
Roasted Beets with Pistachios, Herbs & Orange

Preheat oven to 375. Arrange beets in roasting & add cinnamon, bay leaves & water
- 3 lbs mixed beets
- 1 3" cinnamon stick, broken into 3-4 pieces
- 2 bay leaves
- 1 C water
- 1 large minced shallot
- 1/4 C white wine vinegar
- Salt
- Zest of 1 orange
- 1/4 C chopped tarragon
- 1/4 C chopped parsley
- 1/4 C chopped chives
- 1/4 C + 2 T olive oil
- 1/4 C chopped, roasted pistachios
- 1/4 C celery leaves for garnish
Marinated Round Steak

Combine all marinade ingredients & marinate steak for 2 hrs then grill
- 1 1/2 lb round steak
- 1/2 C olive oil
- 1/4 C water
- 1 T lemon pepper marinade
- 1 T seasoned salt
