Spicy Shrimp & Chorizo Kebobs

Mash garlic & salt to a coarse paste
- 2 cloves thickly sliced garlic
- 2 t sea salt
- 2 t caraway seed, finely chopped
- 2 T chile powder
- 1/4 olive oil
- 2 lb shrimp
- 8 small chorizo, sliced
Lemon Garlic Lamb Chops with Minted Couscous

Finely grate lemon rind from both lemons & then squeeze to yield 1/4 C lemon juice
- 12 3/4 " lamb rib chops
- 2 med. lemons
- 1/4 C EVOO
- 6 cloves minced garlic
- Kosher salt & pepper
- 3/4 C couscous
- 1/2 thawed peas or fresh peas
- 1/2 C chopped mint
Pork & Sweet Pepper Kebobs, May

Place first 7 ingredients in large zip-lock bag, mixing well
- 1/4 C low sodium soy sauce
- 1 T fresh lemon juice
- 1 T catsup
- 2 t brown sugar
- 1 t Worcestershire
- dash crushed red pepper
- 1 pork tenderloin, cut into 1/2" cubes
- 1/4 kosher salt
- 16 mini bell peppers
- Cooking spray
Turkey Piccata

Sprinkle turkey with salt & pepper
- 8 turkey cutlets
- 1/4 t salt
- 1/4 t pepper
- 1 T olive oil
- 2 T butter
- 1/4 C chopped shallots
- 1 T minced garlic
- 3/4 C dry white wine
- 1/2 C chicken stock
- 1 t flour
- 2 T lemon juice
- 1 1/2 T capers
- 2 T chopped Italian parsley
Lemon Aragula Potato Salad

Place potatoes in saucepan, cover with cold water to 2” above potatoes
- 2 lbs Yukon gold potatoes, peeled & cut into 1" pieces
- 7 t olive oil, divided
- 1/2 C finely chopped shallots (@3 small)
- 1 1/2 T sherry vinegar
- 2 t stone ground mustard
- 1 t grated lemon peel
- 1 t lemon juice
- 1/2 t salt & pepper
- 2 1/2 C aragula
Broccoli & Red Pepper Soup

Trim & peel broccoli stems; then coarsely chop
- 2 lbs. broccoli
- 1/3 C white rice
- 1 1/2 t salt
- 2 qts. vegetable broth
- 3 med. roasted red peppers
- 1 T olive oil
- 1 med diced onion
- 3 cloves minced garlic
- 1 T chopped tarragon
- 1/2 t thyme
- Pinch of cayenne
- 1/2 t cider vinegar
- 1/2 t umeboshi vinegar
- Juice of one lemon
Chicken Salad Habanera

Combine all ingredients except avocado
- DRESSING:
- 1 1/2 C cooked chicken,cut in strips
- 1 C sliced black olives
- 1 avocado
- 1/3 C green pepper strips
- 1/4 C finely chopped red onion
- 3 T pimento strips
- 1/3 C olive oil
- 1/4 C lemon juice
- 1/4 C wine vinegar
- 1 t sugar
- 1 clove minced garlic
- Salt & pepper
Horseradish Crusted Steak & Citrus Vinaigrette

Whisk shallots, orange peel & juice, vinegar & honey in small bowl
- 2 T finely chopped shallots
- Peel of one orange
- 1/3 C orange juice
- 3 T rice wine vinegar
- 2 t honey
- 2 t olive oil
- 1 lb. flank steak
- Salt & pepper
- 2 T prepared horseradish
- 8 oz. mixed greens
- 2 oranges, sectioned
- 1/2 med. red onion, thinly sliced
Brussel Sprouts with Sesame, Garlic & Ginger

Heat sesame oil over med hi heat; add onion, garlic & ginger; sauté 3 min
- 1 lb brussels sprouts, trimmed & halved
- 8 halved cloves of garlic
- 1 C sliced onion
- 1/3 C chicken broth
- 1 T sesame oil
- 2 t minced ginger
- 1 minced garlic clove
- 1/2 C sliced green onions
- 1 T soy sauce

Potatoes with Roasted Red Pepper Puree

Preheat oven to 375. Scrub potatoes & peel
- 8 small russet potatoes
- Salt & pepper
- 2 T olive oil
- 1 red bell pepper
- 1 T butter
- 1/4 C rinsed & drained capers
- 3 slices prosciutto
