In a medium bowl, add filling ingredients and combine well
- Filling:
- 2 * 2 cups leftover mashed potatoes
- 1/2 * 1/2 cup smoked ham, diced
- 1/4 * 1/4 cup frozen sweet peas, thawed
- 1/2 * 1/2 cup shredded Gruyere
- Dough:
- 2 * 2 cups bread flour
- 2 * 2 cups all-purpose flour
- 1/4 * 1/4 teaspoon baking powder
- 1 * 1 teaspoon salt
- 1 * 1 egg, beaten
- 2 * 2 teaspoons olive oil
- 1 * 1 cup warm water
- 1 * 1 gallon salted water
- 1 * 1 small onion, sliced
- 1/2 * 1/2 stick butter
- 2 * 2 scallions, sliced
- * Sour cream, to garnish
Jicama, Carrot Orange-Chipotle Slaw

Whisk the marmalade with orange juice, chipotle sauce, vinegar and oil
- 1/4 * 1/4 cup orange marmalade
- 1 * 1 orange, zested and juiced
- 2 * 2 tablespoons adobo sauce from canned chipotle in adobo (pop the chipotles in plastic baggie and freeze for later use)
- 1/3 * 1/3 cup white wine vinegar
- 1/3 * 1/3 cup canola oil
- 1 * 1 pound jicama root, peeled
- 2 * 2 cups shredded carrots
- 1/4 * 1/4 cup freshly chopped cilantro leaves
