Orzo With Parmesan & Basil

Saute shallot and garlic in oil for 2 minutes Add orzo and saute 2 minutes
- 2 tablespoons olive oil &/or butter
- 1 clove garlic, minced
- 1 large shallot, finely chopped
- 1 1/2 cups orzo
- 3 cups chicken stock
- 1/2 cup freshly grated parmesan cheese
- 1/4 cup slivered fresh basil
- salt and fresh ground pepper
Green Peppercorn Sauce

- 1 tablespoon butter
- 1 medium clove garlic, minced
- 2 1/3 cups red wine
- 1/2 cup canned beef broth
- 1/4 cup heavy cream
- 1 tablespoon green peppercorns,, drained
Gruyere Chicken

Flatten the chicken breasts with the palm of you hand until they are 1/2-inch thick

- 1 C sifted cake flour
- 1/2 C granulated sugar
- 1 1/4 C egg whites, at least 2 days old (about 8-12) room temperature
- 1 1/4 tsp cream of tartar
- 1/4 tsp salt
- 1 tsp vanilla
- 1/4 tsp almond flavouring
- 1 C granulated sugar

Smoked Salmon Baquette Slices
