Heather's BBQ Ribs aka Smoky Tex Mex Ribs

Trim fat from ribs; cut into 2 or 3-rib serving-size portions
- 3 pounds pork side or back ribs
- SAUCE
- 2 teaspoons vegetable oil
- 2 cloves garlic, minced
- 1/3 cup minced onion
- 3/4 cup ketchup
- 1/3 cup water
- 2 tablespoons cider vinegar
- 4 teaspoons packed brown sugar
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1 teaspoon worcestershire sauce
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/4 teaspoon liquid smoke flavoring
Tortilla Roll-Ups

Combine cheese, mayo and mustard
- 125 grams light cream cheese
- 2 tablespoons mayonnaise, or salad dressing
- 2 teaspoons dijon mustard
- 1/4 cup finely chopped dill pickle, drained
- 3 10-inch flour tortilla
- 8 ounces shaved deli beef
Lemon Herbed BBQ Chicken

Combine all ingredients, except chicken, in saucepan
- 6 chicken breast
- 1/2 cup butter
- 1/2 cup vegetable oil
- 1/3 cup lemon juice
- 2 tablespoons finely chopped fresh parsley
- 2 tablespoons garlic salt
- 1 teaspoon dried rosemary
- 1 teaspoon dried summer savory, crushed
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
Snack Mix

Combine first 6 ingredients in 5L slow cooker
- 1/4 C butter
- 1 1/2 tsp seasoning salt
- 1/4 tsp garlic powder
- 3/4 tsp onion powder
- 1/4 tsp celery salt
- 1 T grated Parmesan cheese
- 1/2 C pretzel sticks
- 1/2 C salted peanuts
- 2 C O-shaped toasted oat cereal
- 2 C whole wheat cereal squares
Spicy Crab Cakes

Mix all indgredients except oil and dry crumbs
- 8 oz crab meat, drained
- 1 1/2 C fresh white breadcrumbs
- 2 spring onions, finely chopped
- 1-2 T chopped fresh dill or parsley
- 1 egg, lightly beaten
- 1/4 C mayo
- 1 T Dijon
- 1-2 T lemon juice
- salt
- 2-3 dashes hot pepper sauce
- fine dried breadcrumbs, for coating
- veg oil for frying
Orange Crepes

In large bowl stir flour, sugar and salt
- 1 1/4 C flour
- 1 T sugar
- 1/4 tsp salt
- 3 eggs, lightly beaten
- 1 C milk
- 3/4 C water
- 2 T Grand Marnier or Brandy
- 3 T butter, melted
Sunburst Bran Muffins

Preheat oven to 400. Line muffin tin
- 2 C flour
- 1 T baking powder
- 1/2 tsp salt
- 1 egg
- 1 1/4 C milk
- 1 1/2 C 100% Bran cereal
- 1/3 C melted butter
- 1/2 C raisins, optional
- 1/2 C brown sugar
- 1 tsp grated orange rind
- 1/2 C orange juice
Brown Bean Dip with Hot Sauce

Put all ingredients into heavy saucepan
- 14 ounces beans in tomato sauce, drained and mashed
- 1 cup grated sharp cheddar cheese
- 1/2 cup butter
- 1/2 cup finely chopped onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Frank's Red Hot Sauce, to taste
Scalloped Potatoes

Combine water and cream of tartar in large bowl
- 2 cups water
- 1 teaspoon cream of tartar
- 5 medium potatoes, quartered and sliced
- 1/4 cup flour
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cups milk
- 1/2 cup grated sharp cheddar cheese
Parmesan Butter Pan Biscuits

Heat oven to 400F. In 9" square baking pan melt butter in oven
- 1/3 C butter
- 2 1/4 C flour
- 2 T parmesan cheese
- 1 T sugar
- 3 1/2 tsp baking powder
- 1 tsp basil leaves
- 1 T chopped fresh parsley
- 1 C milk
