French Onion Soup

Peel onions and slice thinly
- 4 large yellow onions, about 1 1/2 pounds
- 1/4 cup butter
- 2 teaspoons sugar
- 2 tablespoons flour
- 1/8 teaspoon pepper
- 1 teaspoon dried thyme
- 2 cloves garlic, crushed
- 5 cups beef stock or broth, 4, 10 oz cans
- 1/2 cup dry white wine
- 1/4 cup rye whiskey
- 2 tablespoons parsley
- 8 slices french bread
- 1 1/2 cups grated swiss or mozzarella cheese
Orzo Walnut Pilaf

Toast walnuts in single layer on rimmed baking sheet in 350 oven for 4 to 5 minutes or until fragrant
- 1 1/2 cups walnuts
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 cloves garlic, minced
- 3 cups orzo
- 7 cups hot chicken or vegetable stock
- 1 1/2 teaspoons dried oregano
- pinch salt and pepper
- 1/2 cup chopped fresh parsley
Ginger Lime Marinade for Chicken

Mix all together with blender
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 1/4 cup honey
- 2 tablespoons fresh lime juice
- 2 tablespoons grated ginger root
- 1/4 teaspoon pepper
- 1 clove garlic, minced
- grated peel of 1 lime
Double Blueberry Shortcakes

Combine flour, sugar, baking powder and salt
- 2 1/4 C cake and pastry flour
- 3 T sugar
- 1 T baking powder
- 1/2 tsp salt
- 1/3 C cold butter, cubed
- 1/2 C dried blueberries or currants
- 3/4 C milk
- 2 tsp brown sugar
- 1 C whipping cream
- 2 C blueberries, sweetened to taste
Reuben Sandwich Melts

Preheat broiler with rack 6-inches from element
- 1 tablespoon vegetable oil
- 12 ounces sliced pastrami or smoked meat, cut in strips
- 2 tablespoons packed brown sugar
- 1/3 cup cider vinegar
- 1 tablespoon dijon mustard
- 1/4 teaspoon each salt and pepper
- 454 grams package coleslaw mix
- 6 slices rye bread
- 6 slices swiss cheese
Greek Marinade for Chicken

Mix all ingredients with hand held blender
- 1/2 cup lemon juice
- 1/4 cup soy sauce
- 3/4 cup vegetable oil
- 1/4 teaspoon pepper
- 3 cloves garlic, minced
- 1 1/2 teaspoons dried rosemary, crushed
Italian Wedding Soup

Combine first 7 ingredients in medium bowl
- 1 large egg
- 1/4 C grated Romano or Parmesan cheese
- 1/4 C fine dry bread crumbs
- 1/4 C milk
- 1 garlic clove, minced
- 1/4 tsp pepper
- 1/8 tsp ground nutmeg
- 1/2 lb lean ground beef
- 1 T olive oil
- 1/2 C diced onion
- 1/2 C diced carrot
- 1/2 C diced celery
- 6 C chicken stock
- 1/4 C finley chopped fresh parsley or 1 T dried
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- 1/2 C Acini del pepe (or other very small) pasta
- 3 C Chopped fresh spinach leaves, lightly packed
- 1/4 C grated Romano or Parmesan cheese

Heat the oil in a preheated wok
- Chili Sauce:
- 4 tsp vegetable oil
- 1 garlic clove, crushed
- 8 oz ground pork
- 8 oz bok choy, shredded
- 4 1/2 tsp light soy sauce
- 1/2 tsp sesame oil
- 8 spring roll skins, 10" square
- oil for deep-frying
- 1/4 C superfine sugar
- 1/4 C rice vinegar
- 2 T water
- 2 red chilies, chopped finely

- 1 6-oz pkg rice squares

- 1 4 1/2-oz pkg pretzel bits
- 2 cups salad oil
- 2 tablespoons worcestershire sauce
- 1 tablespoon garlic salt
- 1 tablespoon onion salt
- 1 teaspoon sage
- 3 drops tabasco sauce

In a large bowl, combine cracker crumbs, onion, chili sauce, milk, eggs, salt, pepper, ground beef and cheese
- 3/4 xu crushed cheese crackers
- 1 small onion, finely chopped
- 1/4 cup chili sauce
- 1/2 cup milk
- 2 eggs, beaten slightly
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 pounds lean ground beef
- 1 cup shredded cheddar cheese
