Brocolli Cheddar Soup

In 4 quart saucepan, heat olive oil over medium heat
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/8 teaspoon nutmeg
- coarsely ground pepper
- 2 cups 2% low-fat milk
- 14 ounces can chicken broth
- 1 1/2 pounds broccoli, cut into 1-inch pieces
- 2 cups shredded sharp cheddar cheese
Lemon Rice

Mix broth, rice and garlic in saucepan
- 2 cups chicken broth
- 1 cup rice
- 1 clove garlic, crushed
- 1 tablespoon grated fresh lemon rind
- 2 tablespoons chopped fresh dill
- 2 tablespoons butter
Quick Waffles

Mix dry ingredients. Beat eggs until frothy
- 2 eggs
- 3/4 C milk
- 2 T vegetable oil
- 1 C flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp sugar

Canadian Cream of Vegetable Soup

Melt butter and cook veggies without browning for 5 minutes
- 2 tablespoons butter
- 1/2 cup diced carrots
- 1/2 cup diced turnip
- 1/4 cup diced potato
- 1/2 cup chopped leeks
- 1/2 cup diced onion
- 3 cups beef broth
- salt and pepper
- 1/2 cup heavy cream
- 2 teaspoons chopped fresh parsley
Apricot Sauce for Meatballs

- 1 cup apricot jam
- 3 tablespoons apple cider vinegar
- 1/4 teaspoon paprika
Glazed Turkey Fillets

Sprinkle both sides of turkey pieces with thyme, basil, salt and pepper
- 4 small turkey fillets, 1 lb total
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon each salt and pepper
- 1 tablespoon vegetable oil
- 1/2 cup water
- 1/4 cup balsamic vinegar
- 2 tablespoons liquid honey
- 2 teaspoons butter
- 1 tablespoon chopped fresh parsley
Basic Banana Bread

Measure first 3 ingredients into large bowl
- 2 C flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 C butter, softened
- 1 C sugar
- 2 large eggs
- 1 1/2 C mashed overripe banana
- 1 T lemon juice
- 1 tsp vanilla extract
Slow Cooker Barbecue Beef

Place beef in a 5 qt slow coooker
- 1 3lb boneless beef sirloin roast
- 3 celery ribs, chopped
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 C ketchup
- 1 can tomato paste
- 1/2 C packed brown sugar
- 1/4 C cider vinegar
- 3 T chili powder
- 2 T lemon juice
- 2 T molasses
- 2 tsp salt
- 2 tsp Worestershire sauce
- 1 tsp ground mustard
- 8 to 10 sandwich rolls
Cashew Chicken

Place chicken and mushrooms in a slow cooker
- 6 boneless skinless chicken breast halves, cut into 1 inch strips
- 4 mushrooms, sliced
- 3 green onions, sliced into 1/2 inch pieces
- 1/4 C soy sauce
- 2 tsp grated gingerroot
- 1/2 C chicken broth
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 8oz can sliced bamboo shoots, drained
- 1/2 C cashews, toasted
- 1/2 C Chinese pea pods
- 2 T cornstarch
- 3 T water
- Cooked rice
Quick Beer Pizza Crust

Grease two 12" pizza pans
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 12 ounces beer, can be flat
