- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 1 1/2 cups arborio rice
- 3 tablespoons fresh oregano, finely chopped
- 1 clove garlic, minced
- 3/4 cup white wine
- 3 cans vegetable broth
- 1/3 cup parmesan cheese
- salt and pepper, to taste
Blueberry Sauce

Combine all ingredients in saucepan
- 2 cups blueberries
- 1/4 cup orange juice
- 1/4 cup water
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon grated orange peel
- 1/8 teaspoon nutmeg
- dash salt
Chicken Linguini Bake

Cook pasta in boiling water until tender but firm
- Sauce:
- 1/2 lb dry linguini, broken (or other pasta)
- 3 qts boiling water
- 2 C coarsely chopped cooked chicken, skin and fat removed
- 2 T minced onion
- 1/3 C sliced or chopped pimiento-stuffed green olives
- 1/4 C all-purpose flour
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 3 C skim milk
- 1 C grated low-fat medium or sharp Cheddar
- 1 1/2 T sherry
- Topping:
- 1 T butter
- 1/3 C dry bread crumbs
Banana Bran Muffins

Measure dry ingredients together
- 1 C flour
- 1 C all-Bran cereal
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 T cocoa
- 1/4 C margarine, softened
- 1/2 C sugar
- 2 eggs
- 1/4 C sour milk
- 1 C mashed bananas
Refried Bean Dip

Combine all ingredients in saucepan
- 8 ounces canned refried beans
- 1 cup grated sharp cheddar cheese
- 1/2 teaspoon chili powder
- 1 teaspoon minced dried onion
- 1/8 teaspoon garlic salt
- 3 drops hot pepper sauce

- 1 large cauliflower
- 1 lemon, juice of
- 2 tablespoons minced onion
- 2 celery stalks, minced
- 1/4 cup butter
- 1/4 cup flour
- 4 cups chicken broth
- 2 cups light cream, scalded
- dash nutmeg
- salt, to taste
- grated parmesan cheese

- boiling water
- 4 teaspoons beef bouillon granules
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/8 teaspoon pepper

Chicken and Fish Shaker Mix

In shallow bowl, stir together cornmeal, Parmesan cheese, flour, paprika, basil, salt and pepper
- 1/4 cup cornmeal
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon dried basil
- 1/4 teaspoon each salt and pepper
- 2 tablespoons milk
- 1 pound boneless skinless chicken breast, or firm fish fillets

Combine cooking oil, sugar, eggs, milk and vanilla in mixing bowl
- 3 T cooking oil
- 1 C sugar
- 2 eggs
- 1 C milk
- 1 tsp vanilla
- 3 3/4 C flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1/3 C cocoa
- oil for deep-frying
Maple-Glazed Thighs
