Cauliflower, Cheddar, Potato Soup

Cook cauliflower and potato in broth until tender
- 4 cups cauliflower
- 1 cup potato, diced
- 2 cans condensed chicken broth, 10 oz each
- 3 tablespoons butter
- 2/3 cup onion, chopped
- 1/2 teaspoon thyme
- 3 tablespoons flour
- 3 cups milk
- 2 1/2 cups shredded medium cheddar cheese
Nutty Orange Couscous

In saucepan, toast pecans over medium heat, stirring for 5 minutes or until golden
- 1/4 cup chopped pecan
- 2 teaspoons vegetable oil
- 1 onion, chopped
- 1/4 teaspoon dried thyme
- 1 cup chicken stock
- 1 teaspoon grated orange rind
- 1/2 cup orange juice
- 1/4 teaspoon each salt and pepper
- 1 cup couscous
BBQ Sauce

Melt butter in saucepan. Add onion
- 1 tablespoon butter
- 1/2 cup chopped onion
- 1 cup ketchup
- 1/3 cup white vinegar
- 1/3 cup water
- 3 tablespoons brown sugar
- 1 teaspoon worcestershire sauce
- 1 teaspoon prepared mustard
Gnocchi with Fontina Sauce

Combine the fontina cheese, cream, butter and Parmesan in a bowl over a pan of simmering water
- 200 g fontina cheese, finely chopped
- 1/2 C cream
- 80 g butter
- 2 T freshly grated Parmesan
- 400 g fresh potato gnocchi
Blueberry Syrup

Combine all ingredient in large saucepan
- 6 C fresh blueberries
- 1 C granulated sugar
- 1 C water
- 1/3 C corn syrup, light or dark
- 2 tsp lemon juice, fresh or bottles

Stir all dry ingredients together in large bowl
- 2 C flour
- 1/2 C sugar
- 4 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1/4 C cooking oil
- 1/2 C milk
- 1 C whole cranberry sauce
Spiced Apple Bran Muffins

beat eggs; blend in milk, sugar, oil, and vanilla
- 4 eggs
- 1 1/2 C milk
- 1 C brown sugar
- 1/2 C egetable oil
- 2 tsp vanilla
- 3 C bran cereal
- 2 C grated peeled apples
- 1 C raisins
- 1 C chopped walnuts
- 3 C flour
- 2 T baking powder
- 2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp salt
BBQ Beef Sandwiches

- 2 cups thinly sliced cooked beef or pork
- 2 tablespoons Instant minced onion
- 1 tablespoon brown sugar
- 1 teaspoon paprika

- 1/2 teaspoon cracked pepper

- 2 tablespoons worcestershire sauce
