Orzo With Parmesan & Basil

Ingredients
- 2 tablespoons olive oil &/or butter
- 1 clove garlic, minced
- 1 large shallot, finely chopped
- 1 1/2 cups orzo
- 3 cups chicken stock
- 1/2 cup freshly grated parmesan cheese
- 1/4 cup slivered fresh basil
- salt and fresh ground pepper

Preparation
Step 1
Saute shallot and garlic in oil for 2 minutes Add orzo and saute 2 minutes. Add chicken stock; bring to boil. Simmer 20-25 minutes. Stir in cheese and basil. Season with salt and pepper.
