ZUCCHINI RELISH

- 20 cup. Cutup or ground zucchini
- 4 large onions chopped
- 2 green peppers chopped
- 2 red peppers chopped
- 1/3 cup salt
- Let stand overnight then drain and rinse
- Add 1 tsp. turmeric
- 1 tsp. curry or nutmeg
- 1 tbsp. cornstarch
- 1 tsp. celery seed
- ½ tsp. pepper
- 2 ½ cup vinegar
- 4 ½ cup sugar
Lasagna (Spinach and Tomato)

Instructions 1. Adjust oven rack to middle position and heat oven to 375 degrees

- 30 ounces frozen chopped spinach
- 2 tablespoons olive oil
- 1 onion, chopped fine
- 5 garlic cloves, minced
- 1/8 teaspoon red pepper flakes
- 2 (28-ounce) cans crushed tomatoes
- Salt and pepper
- 6 tablespoons chopped fresh basil
- 24 ounces (3 cups) whole-milk or part-skim ricotta cheese
- 3 ounces Parmesan cheese, grated (1 1/2 cups)
- 2 large eggs
- 12 no-boil lasagna noodles
- 12 ounces whole-milk mozzarella cheese, shredded (3 cups)
Bacon Wrapped Stuffed Onion Meatballs

Onion Bombs look small, but they are jam-packed with flavor and are surprisingly filling
- 2 pounds ground beef
- 1 cup bread crumbs
- 1 egg, beaten
- 1 cup milk
- 1/2 cup BBQ Sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 3 to 4 medium/large yellow onions
- 1 package of Bacon
- Additional BBQ Sauce for dipping
SWEET PUMPKIN WHIP

COMBINE PUDDING MIX AND MILK IN A MEDIUM BOWL, WHISK UNTIL WELL BLENDED
- 1 (3.4 OZ) PACKAGE INSTANT SUGAR FREE, FAT FREE CHEESECAKE FLAVOR PUDDING
- 1 CUP FAT FREE MILK
- 1/2 15 OZ CAN SOLID PUMPKIN
- 1 TSP GROUND CINNAMON
- 1/4 TSP GROUND NUTMEG
- 1/2 8 OZ COOL WHIP
Butter Chocolate Toffee

In a heavy saucepan, combine sugar and butter
- 1 cup sugar
- 1 cup of butter
- 1 pkg. (6 oz. size) chocolate chips
- 1 cup chopped pecans

- 1 3/4 cups sugar
- 1 1/3 cups non-fat dry milk
- 1 cup instant coffee powder (MJB)
- 1/3 cup cocoa
- 1 tsp. cinnamon
- 1 tsp. nutmeg
JOHN WAYNE CASSEROLE

1. Heat oven to 325 deg. brown ground beef and add taco seasoning and water, according to packet
- 2 lbs. ground beef, cooked and drained
- 1 (1.25 oz.) packet of taco seasoning
- 4 oz. sour cream
- 4 oz. mayonnaise
- 8 oz. cheddar cheese, shredded and dwvided
- 1 yellow onion, sliced
- 2 cups biscuit mix
- 2 tomatoes, sliced
- 1 green bell pepper, sliced
- 1 (4 oz.can)sliced jalapeno peppers
MASCARPONE PASTA

GOES WELL WITH GARLIC SHRIMP
- 8 OZ PASTA (FETTUCCINI)
- 1 CUP MILK
- 4 TSP BASIL
- 1/2 TSP. SALT
- 1/4 TSP. PEPPER
- 1 TB. OLIVE OIL
- 1 TB. FLOUR
- 1/2 CUP FRESHLY GRATED PARMESAN CHEESE
- 2 TB. MASCARPONE CHEESE
Carmel Apple Bread Pudding

Melt caramels with water in a covered double boiler or in a saucepan over low heat
- 28 Caramels
- 1/4 cup water
- 4 cups bread cubes
- 4 cups apples, peeled and sliced
- 5 eggs, slightly beaten
- 2 cups milk
- 1/4 cup sugar
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
