Cheddar Bacon Scalloped Potatoes

I prefer to bake this in the over rather than microwaving
- 6 slices bacon, cooked and chopped, divided (can use turkey bacon)
- 2 - 2 1/2 #'s potatoes, unpeeled and thinly sliced (about 6 medium)
- 3 Tbl butter or margarine
- 3 Tbl all purpose flour
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 can (12 oz) evaporated milk (can use low fat)
- 1 cup water
- 2 cups (8 oz) shredded cheddar cheese, divided
- 2 green onions, sliced
Tomato Risotto w/ Portabella Mushrooms

Healthy
- 2 T butter
- 1 C Arborio or short grain rice
- 1 t minced garlic
- 2 Large shallots, peeled and thinly sliced
- 1 t dried basil
- 4 C vegetable stock or reduced-sodium broth, warmed
- 1 8-oz can tomato sauce
- 1/3 C white wine
- 1/4 C sun-dried tomatoes, drained and minced
- 1/4 C shredded Parmesan cheese, plus extra for topping
- 4 small portabella mushrooms
Ricotta & Spinach Cannelloni

Mix the first 5 ingredients together
- 3 cups fresh spinach leaves, steamed, drained & finely chopped (about 1/2 to 3/4 C cooked)
- 2 cups ricotta cheese
- 1/3 cup grated parmesean cheese (fresh)
- salt & pepper
- 4 Tbl of finely chopped fresh basil
- 2 - 3 cups marinara
- 1/2 cup grated fresh parmesean cheese, for topping
- 5 oz lasagna sheets, fresh
Creamed Spinach & Cheddar Strata

Grease 9X11 or 3 quart baking dish with butter In a large bowl, beat milk, yogurt, and eggs till combined
- Unsalted butter
- 1 1/2 cups whole milk
- 1/2 cup non fat plain Greek yogurt
- 6 large eggs
- 1 Tbl Dijon mustard
- 1/2 teas EACH: kosher salt & freshly ground black pepper
- Pinch freshly ground nutmeg
- 1 10-oz box frozen creamed spinach, thawed
- 1 1# loaf sliced white sandwich bread, quartered to make 4 triangles from each slice
- 6 oz (about 2 cups) ages sharp white cheddar cheese, grated
- 1 pint cherry tomatoes
Cabbage Rolls

First, steam the entire head of cabbage in a pot of boiling water, making sure to cut off the core first
- 12 cabbage leaves
- 1 cup cooked white rice (cook in beef broth for added flavor)
- 1 egg, beaten
- 1/4 cup milk
- 1/2 cup minced onion
- 1 # extra-lean meat, half ground beef and half ground pork (optional)
- 1 1/4 teas salt
- 1 teas pepper
- 1/4 teas garlic powder
- 2 8oz cans tomato sauce
- 1 14.5 can diced or crushed tomatoes, with liquid
- 1 Tbl brown sugar
- 1 1/2 Tbl lemon juice
- 1 Tbl Worcestershire sauce
Penne With Creamy Garlic Sauce

Cook pasta according to package directions
- 1 pkg (1#) uncooked Penne Rigate
- 2 Tbl butter or margarine
- 2 large cloves garlic, minced
- 2 Tbl all-purpose flour
- 3/4 cup ready to serve chicken or beef broth
- 3/4 cup milk or light cream
- 2 tsp dried parsley flakes
- salt & ground pepper to taste
- 1/3 cup grated parmesan cheese
Chicken - Buttermilk Baked

Preheat oven to 400. Fit a sheet tray with a wire rack and spray with nonstick cooking spray
- 2 Cups Buttermilk
- Juice of 1/2 lemon
- 1 T hot sauce
- 1/2 yellow onion, sliced
- 5 sprigs fresh thyme
- 3 cloves garlic, smashed
- Kosher salt & freshly ground black pepper
- 1 (3#) chicken cut into 8 pieces, rinsed & patted dry
- 2 cups crushed corn flakes
- 3/4 cup grated parmesan cheese
- 2 teas chopped fresh thyme
Grilled New Potato Salad w/Bacon & Buttermilk Dressing

Put the potatoes in a pot of salted cold water and bring to a boil
- 2 1/2 # small red new potatoes, scrubbed
- Kosher salt
- 8 oz bacon, diced
- 1/2 cup buttermilk
- 2 Tbl mayonnaise
- 2 Tbl sour cream
- 1 Tbl Dijon mustard
- 1 teas onion powder
- 1 teas garlic powder
- Freshly ground black pepper
- 1/4 cup canola oil
- 3 green onions, white & green parts, thinly sliced
Flatbreads

This makes a great appetizer when topped with grilled vegetables
- 3/4 cup warm water (105 to 115F)
- 1 teas active dry yeast
- 6 Tbl olive oil
- 2 cups all-purpose flour, plus more for rolling
- 1 teas kosher salt

- 8 red potatoes, thinly sliced
- 2 large onion, chopped
- 8 cloves garlic, chopped
- 1/2 cup chopped fresh basil
- 1/2 cup butter, cubed
- salt & pepper to taste
