Heat 2 Tbl oil in a large sauté pan over high heat
- 6 Tbl olive oil
- 12 oz mild Italian sausage, casings removed
- 1 medium Spanish onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/4 teas red chile flakes
- 1/2 cup dry red wine
- 8 oz fresh spinach leaves, stems removed, coarsely chopped
- Kosher salt & freshly ground pepper
- 2 Tbl chopped fresh basil leaves, plus more for garnish
- 2 Tbl chopped fresh flat-leaf parsley leaves, plus more for garnish
- 12 oz fresh mozzarella, cut into small cubes
- 4 large Portobello mushrooms, stems removed
- 2 plum tomatoes, thinly sliced

Combine the bay, celery salt, mustard, paprika, black & white peppers, nutmeg, cloves, allspice, ginger, chile flak...
- 1 Tbl ground bay leaves
- 2 1/2 teas celery salt
- 1 1/2 teas dry mustard
- 1 teas sweet Spanish paprika
- 1 teas ground black pepper
- 1/2 teas ground white pepper
- 1/2 teas ground nutmeg
- 1/2 teas ground cloves
- 1/4 teas ground allspice
- 1/4 teas ground ginger
- 1/4 teas crushed red chile flakes
- 1/4 teas ground cardamom
- 6 Idaho potatoes, scrubbed
- Kosher salt
- 1/2 cup canola oil
- chopped fresh chives, for garnish (optional)
- Fresh flat-leaf parsley leaves, for garnish (optional)
Grilled Chicken with Roasted Garlic-Oregano Vinaigrette & Grilled Fingerling Potatoes

Put the potatoes in a medium saucepan, cover with salted cold water, and bring to a boil
- 12 fingerling potatoes, scrubbed
- Kosher salt
- 4 8-oz bone in chicken breasts
- 6 Tbl olive oil
- Ground pepper

- 8 cloves roasted garlic
- 1/4 cup white wine vinegar
- 1 teas honey
- 2 Tbl fresh oregano leaves
- 1/2 teas kosher salt
- 1/4 teas red chile flakes
- 3/4 cup extra virgin olive oil
- Fresh oregano sprigs, for garnish
Cold Broccoli Salad

Cream dressing ingredients & pour over the top of the broccoli mixture
- Combine above ingredients; Then for dressing:
- 2 Heads broccoli, cut into small pieces
- 2 Finely chopped green onion
- 1 # bacon, fried & crumbled
- 2 C shredded cheddar cheese
- 1/2 C sugar
- 1 C mayo
- 2 T cider vinegar

- 4 boneless skinless chicken breasts
- Salt & ground pepper to taste
- All-purpose flour, for dredging
- 6 Tbl (3/4 stick) unsalted butter

- 1 1/2 C dry white wine
- 1 C whipping cream

- Elbow noodles or shells
- Boneless Chicken Breast
- Lite Mayo (or regular if you prefer)
- Grapes
- Lawrys Seasoned Salt
- Celery Salt
- Pepper
- Tiny bit of yellow mustard
Arugula Salad with Walnuts, Dried Cherries & Feta

Toss together arugula, cherries, walnuts, & feta cheese in large salad bowl
- 1 (11 oz) container baby arugula
- 3/4 C dried cherries
- 3/4 C toasted walnuts
- 4 oz feta cheese, crumbled
- 3 T sherry vinegar or balsamic vinegar
- 2 T olive oil
- 1/4 t salt
- Freshly ground black pepper
Marinara Sauce

- 2 C diced drained canned tomatoes (reserve liquid)
- 3 C canned tomato sauce
- 2 T minced fresh garlic
- 2 T extra virgin olive oil
- 3 T sun dried tomatoes
- salt & black pepper to taste
- 1/4 C diced yellow onions
- 1 T fresh minced oregano
- 1 T fresh minced basil
- pinch of red pepper flakes

- 2 C Chicken Broth (14 1/2 oz)
- 1 # mushrooms - sauted or 4 small cans
