Serve hot with favorite crackers or nacho chips
- 1cup1 cup thawed, chopped frozen spinach
- 1 1/2cups1 1/2 cups thawed, chopped frozen (or jarred) artichoke hearts
- 6oz6 oz cream cheese
- 1/4cup1/4 cup sour cream
- 1/4cup1/4 cup mayonnaise
- 1/3cup1/3 cup grated parmesan
- 1/21/2 teas red pepper flakes
- 1/41/4 teas salt
- 1/41/4 teas garlic poweder
Ravioli Pasta Dough

Pasta: Mix & roll out thin to fill ravioli tray
- 2 egg whites + little water
- 3 eggs
- 4 - 5 C flour
- Salt
- __________________________________________________
- Filling for Ravioli
- 1 1/2 # Ricotta
- 2 egg yolks
- 2 Tbl grated cheese
- Salt & Pepper
Rump Roast

Pre-Heat the over to 500 degrees
- 1 (4#) rump roast (room temp)
- 3 garlic cloves
- 1 T salt
- 1 T pepper
- 1 onion
- 1 Cup water
Pancake Breakfast Pancakes

In a bowl, using an electric mixer, beat the eggs on medium speed until frothy
- 2 eggs
- 2 C all-purpose flour, sifted
- 2 Tbl sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 1/2 cups buttermilk
- 4 Tbs (1/2 stick) unsalted butter, melted
- 1/2 tsp vanilla extract
- 1 - 2 Tbs vegetable oil or non stick cooking spray
- Maple syrup for serving...
Tuna Noodle Casserole

I double this recipe.... great for lunch leftovers!!
- 3 cups uncooked egg noodles
- 1 can (10.75 oz) reduced-fat cream of mushroom soup
- 1/2 cup milk
- 2 Tbl sour cream
- 1/2 teas ground mustard
- 1 can (5 oz) albacore white tuna in water
- 1/4 cup chopped roasted red peppers or peas (or both)
- 2 Tbl butter
- 10-15 crackers (saltines, ritz, potato chips... your choice)

- 1 2/3 C (11 oz pkg) Nestle Butterscotch Flavored Morsels - divided
- 1 1/2 C (9 oz) Nestle Milk Chocolate Morsels
- 1/2 C creamy peanut butter
- 2 C dry roasted peanuts
- 2 C pretzel sticks
- 1 1/3 C Nestle Milk Chocolate Raisins

- SAUCE:
- 1 cup shredded leftover steak
- 1 sm red bell pepper
- 1 sm green bell pepper
- 4 medium leaves Chinese cabbage
- 3 scallions
- 2 cloves garlic
- 4 cups spinach
- 1/2 # vermicelli
- 3-4 Tbl olive oil
- 6 Tbl chicken broth
- 2 Tbl black soy sauce
- 4 Tbl oyster sauce
- 2 Tbl oriental sesame oil
- 1/4 teas black pepper
- 1 teas sugar
WonTon Soup

To make wontons: In a medium bowl, mix filling ingredients thoroughly
- 3/4 # ground pork
- 2 T minced celery
- 2 minced green onions
- 1 egg
- 2 T soy sauce
- 1 1/2 T white wine
- 1/2 t sesame seed oil
- 1/2 t salt
- dash white pepper
- SOUP
- 1 carton (48 0z) chicken broth
- 1 1/2 to 2 T soy sauce
- 1 chopped scallion
- 24 - 30 wonton wrappers
Pumpkin Pie from Fresh Pumpkin

This pie tastes so much better than the ones from canned pumpkin
- 4 C pumpkin
- 3 t nutmeg
- 1 t clove
- 2 t cinnamon
- 4 C Canned Milk (1 Qt or 32 oz)
- 6 Eggs
- 2 C sugar
- Unbaked pie shells (2)
Tomato Vodka Sauce

Combine in oven safe pan: olive oil, onion, garlic, red pepper flakes, oregano and tomatoes (crushed)
- In oven safe pan add:
- 2 cans SanMarzano Tomatoes (or your favorite brand).. "whole peeled"
- olive oil
- 1/4 onion, diced very small
- 1 clove garlic - crushed
- red pepper flakes
- pinch of oregano
- 1/4 cup vodka
- 1/4 cup heavy cream
