Philly Cheesesteak with Green Peppers

The provolone sauce is so good that you will want to use it on burgers as well as other sandwiches
- 2 # ribeye or strip loin, trimmed of fat
- 4 soft hoagie (sub) rolls
- 4-6 oz button mushrooms, sliced
- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 Tbl vegetable oil
- 1 Tbl unsalted butter
- 1 Tbl all purpose flour
- 2 C whole milk, warmed
- 1 C provolone, grated (not sliced)
- salt & pepper to taste
Po' Boys - Sausage Heroes w/ Marinara

Preheat oven to 300 degrees
- 3 TBL Olive Oil
- 2 1/2 # (8 - 5oz links) sweet Italian Sausage (or hot, if you prefer)
- 2 yellow onions, thinly sliced
- 2 green bell peppers, cored, seeded, thinly sliced
- 2 tsp Emeril's Original Essence
- 8 Hero buns, split lengthwise
- Marinara sauce (jarred or homemade) heated
- 1/2 cup mayo
- 2 cup shredded mozzarella
- 1/2 cup grated parmesean
Chicken & Cheese Enchiladas w/ green chilies

Preheat oven to 350. Grease a 9 x 13 pan
- 10 soft taco shells
- 2 C cooked shredded chicken
- 2 C shredded Monterey Jack cheese
- 3 T butter
- 3 T flour
- 2 C chicken broth
- 1 C sour cream
- 1 4oz can diced green chilies (can use crushed red pepper as a substitute)
Scallops Florentine

Position rack in center of oven & preheat to 425
- 3 oz parmesan cheese
- 1 t nutmeg
- 3 cloves garlic
- 1/2 t white pepper
- 1 1/4 # spinach stems (a box of frozen will work as well)
- 1 1/4 # scallops
- 1/2 cup unsalted butter
- 8 oz small pasta, al dente & drained
- 1 t salt
- 1 cup whipping cream
Garlic-Lemon Scallops

Melt butter in large skillet over medium - high heat
- 3/4 C butter
- 3 T minced garlic
- 2 # large sea scallops ( I use 1# for two servings)
- 1 t salt
- 1/8 t pepper
- 2 T fresh lemon juice
Holiday Cheese Ball

This appetizer can be frozen for up to a month
- 2 8oz cream cheese-softened
- 1 8oz can crushed pineapple - well drained
- 1 C chopped pecans
- 1/4 C diced green pepper
- 2 T chopped onion
- 1 T seasoning salt
- parsley or additional nuts
Pumpkin Roll

Easy to make for the holidays
- Cream together:
- 3 eggs
- 2/3 C pumpkin
- 1 C granulated sugar
- 3/4 C flour
- 1 t baking soda
- 1/2 t cinnamon

- 1 C chopped walnuts or pecans
- __________________________
- 1/2 C powdered sugar
- __________________________
- 8 oz cream cheese
- 2 T butter
- 1 C powdered sugar
- 1 t vanilla
Zucchini Crisp Pizzas

Preheat oven to 450.... and lightly grease a rimmed baking sheet with nonstick spray
- 3 medium zucchinis, rinsed & cut into thin rounds
- 2/3 C Panko or seasoned breadcrumbs
- 2/3 C parmesan cheese, grated
- 1/2 C mozzarella cheese, grated
- 1/3 C marinara or pizza sauce
- 2-3 Tbl extra virgin olive oil
- kosher salt & freshly ground pepper, to taste
Frosted Caramel Apple Pie

A. Place shortening, lard & salt in a large bowl & beat till smooth
- A. Pie Crust:
- 1/2 C shortening, room temp
- 1/2 C lard, very soft
- 1 teas salt
- 1/2 C boiling water
- 3 C all-purpose flour
- B. Pie Filling:
- 3 to 3 1/2 # Granny Smith apples
- 1 C light brown sugar, packed
- 4 TBL cornstarch
- 2 TBL flour
- 1/2 TBL small tapioca
- C. Frosting:
- 3 TBL butter
- 1 1/2 C powdered sugar
- 1/2 teas vanilla
- 2-3 TBL evaporated milk
- 1/2 C English toffee bits

- 1 # NY Sharp Cheddar
- 1 C mayo
- 1 bottle chili sauce
- 1 medium onion
- juice of one lemon (at least)
- salt & pepper - 1/4 t each.. appx
