Easy Ricotta Gnocchi

- 1 16-oz container whole milk ricotta
- 1 large egg
- 1/2 cup finely grated Parmesan or Pecorino cheese
- 1/2 teas salt
- 3/4 to 1 cup flour
Chicken Breasts with Wild Mushrooms & Marsala

Season chicken with 1/4 t each salt and pepper
- 4 skinless, boneless chicken breast halves (about 6 oz each), tenders (thin strip on underside of each breast half) removed
- 1/2 t each: salt and freshly ground pepper
- 1/4 cup flour
- 2 T each: oil and butter
- 12 oz fresh crimini or white button mushrooms, sliced
- 2 T finely chopped shallot
- 1 T ground dried porcini mushrooms (see note)
- 1 cup each: dry Marsala and fat-free chicken broth
Hot Biscuits

Preheat the oven to 450..
- 2 C all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 6 Tbl unsalted butter, cut into small pieces and chilled
- 1/2 C plus 1 Tbl cold milk
Chicken Alfredo (easy)

Heat the olive oil in a skillet while cutting the chicken breasts into 1/4" wide strips
- 2 Large boneless skinless chicken breasts
- 3 T olive oil
- 1/4 Cup butter
- 1/3 Cup grated Parmesan cheese
- 3/4 Cup heavy cream
- 8 oz can cream of mushroom soup
- 1 # fettucine
- Water
Barbeque Sauce

Put a bit of olive oil in the bottom of a pan
- 2 parts ketchup
- 1 part mustard
- Finely chopped onion
- 1 minced garlic clove
- pepper
- salt
- pinch of fresh sage
- 1-2 Cups brown sugar (dark)
- Olive oil
Spinach & Artichoke Dip - Baked

Voted best appetizer in 2008!!
- 1 Cup mayonnaise
- 1 Cup grated Parmesan Cheese
- 1 Can ( 14 oz ) artichoke hearts, drained & coarsely chopped
- 1 box (9 oz) frozen chopped spinach, thawed & squeezed to drain
- 1/2 Cup chopped red bell pepper
- 1/4 Cup shredded Monterey Jack or mozzarella cheese (1 oz)
- Crackers, Nacho chips, etc...
Sweet Potatoes - Roasted

Preheat the oven to 300 degrees
- 3 sweet potatoes, peeled & cut into bite size cubes
- 2 tsp olive oil
- 1 Tbl butter
- 1 Tbl brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- pinch of ground ginger
- sea salt, to taste
Waffles

Blend beaten egg yolk into buttermilk & melted oleo
- 2 egg yolks - beaten
- 6 T melted oleo or butter
- 1/2 t salt
- 1 1/3 t baking powder
- 2 egg whites
- 1 3/4 C Buttermilk
- 2 C flour
- 1/4 t Baking Soda
- 1 T sugar
Meatballs stuffed with Mozzarella

These meatballs are slow cooked
- 3/4 # ground beef
- 3/4 # ground pork
- 1 C seasoned breadcrumbs
- 1/2 C parmesan
- 4 mozzarella cheese sticks, each cut into 6-8 small pieces
- 2 cloves garlic, minced
- 1 egg
- 1 egg yolk
- 3/4 teas Italian seasoning
- 1 teas onion powder
- salt & pepper to taste
- marinara sauce, homemade or store bought (enough to cook with the meatballs and extra for meatball hoagie.
Easy Creamy Chicken with Wild Rice Soup

This is a crock pot recipe and so easy!!
- Part 1:
- 1/2 C uncooked rinsed wild rice
- 3/4 C diced celery
- 1 C diced carrot
- 1 C diced onion
- 4-5 minced garlic cloves
- 1 1/2 tsp pepper
- 1 Tbl It seasoning
- 1 1/2 # chicken breasts
- 1-2 bay leaves
- 6 C chicken broth
- 2 C water

- Part 2 for the roux:
- 5 T butter - melted
- 1/2 C flour
- 2 C whole milk
- 2 tsp salt
- pepper to taste
