Broccolli Casserole

Can be made 1 day ahead and refrigerated or up to 1 month ahead and frozen
- 3 boxes frozen chopped broccoli
- 1 can cream of mushroom soup
- 4 oz shredded cheddar
- 3/4 cup mayo
- 2 eggs - beaten
- salt to taste
- 1/2 cup butter - melted
- one sleeve Ritz crackers - crushed
Shrimp with Green Onion, Garlic, & BBQ Spices

Whisk together the paprika, ancho powder, brown sugar, cumin, salt & pepper in a small bowl
- 1/4 cup smoked sweet paprika
- 2 Tbl ancho chile powder
- 2 Tbl light brown sugar
- 2 teas ground cumin
- 2 teas kosher salt
- 1 teas freshly ground black pepper
- 2 # extra-large (26-30 count) shrimp, shell on
- 7 Tbl canola oil
- 12 cloves garlic, coarsely chopped
- 1/2 cup thinly sliced green onion, white & green parts
Chocolate Cake Roll

Preheat oven to 350. Line a 15 X 10 jelly roll pan w/ waxed paper
- 1/3 C cake flour
- 1/3 C unsweetened cocoa powder
- 2 T cornstarch
- 1/2 t baking soda
- 1/2 t baking powder
- 1/3 t salt
- 4 large eggs, separated
- 1 C granulated sugar, divided
- Confectioner's sugar
- 1 container (8 oz) frozen whipped topping, thawed
Crispy Cheddar Chicken

I cut this recipe in half using 2 large chicken breasts but make no changes in the sauce
- Sauce:
- 2 # chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz cracker
- 1/4 teas salt
- 1/8 teas pepper
- 1/2 cup whole milk
- 3 cups cheddar cheese, grated
- 1 teas dried parsley
- 1 10oz can cream of chicken soup
- 2 Tbl sour cream
- 2 T butter
Calzone Cheesy Pull Apart

I changed this recipe a bit
- 1 can (13.8 ounces) refrigerated pizza crust
- 1/4 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 3 slices roasted turkey breast
- 2 tablespoon chopped broccoli florets
- 2 tablespoon frozen corn
- 1 tablespoon water
- 1 tablespoon parmesan cheese
Pineapple & Cream Cheese Upside Down Cake

Preheat oven to 350. Spray a 9" spring form pan with nonstick cooking spray
- 1/4 cup butter, melted
- 1/2 cup packed brown sugar
- 1 can (20 oz) Pineapple slices, drained
- 8 maraschino cherries
- 1 pkg (9 oz) yellow cake mix
- 2 pkg (8 oz ea) cream cheese, softened
- 1 pkg (3 oz) lemon jello
- 2 eggs
Cauliflower - Broiled w/ Parsley and Lemon

For the cauliflower: Place the first head of cauliflower upright (stem side down) on a flat surface
- Vinaigrette:
- 2 Lg heads cauliflower (2 - 2.5# each)
- Kosher salt
- 2 13.5 oz cans unsweetened coconut milk
- 2 T coriander seeds, lightly crushed
- 1 t red pepper flakes
- 2 T fresh lemon juice
- 2 T Dijon mustard
- 2 T red wine vinegar
- 2/3 C extra-virgin olive oil
- Gremolata:
- 1 C flat leaf parsley leaves, chopped
- Zest of one lemon
- 2 med cloves garlic, minced
Minestrone Soup (Carabbas copy)

Heat a 10 quart stock pot to medium heat and place butter and oil in pot
- 1 oz butter
- 1 gallon chicken stock
- 1 Tbl olive oil
- 1 bay leaf
- 1/2 lb carrot cut into 1/2" cubes
- 1/4 lb tomato cut into 1/2" cubes
- 1/4 lb celery cut into 1/2" cubes
- 1 - 2 oz prosciutto ham
- 1/4 lb onion cut into 1/2" cubes
- 2 oz romano cheese rind
- 1 tsp garlic, finely chopped
- 1 lb potato, peeled cut into 1/2" cubes
- 1/4 lb fresh green beans 1" long
- 1 15oz can kidney beans
- 1 lb cabbage, cored and cut into 2" squares
- 1 15 oz can garbanzo beans
- 1/4 lb zucchini cut into 1/2" cubes
- 1 15oz can cannellini beans
- 1 tsp parsley, chopped
- 2 oz romano cheese, grated
- 1 tsp basil, chopped
- salt & pepper to taste
Chicken Gnocchi Soup

Olive Garden copy
- 4 Tbl (1/2 stick) butter
- 1 Tbl extra virgin olive oil
- 1 C finely sliced onion
- 1/2 C finely diced celery
- 2 garlic cloves, minced
- 1/4 C all purpose flour
- 1 quart half/half
- 2 (14 oz each) cans chicken broth
- Salt
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley flakes
- 1/4 tsp ground nutmeg (optional)
- 1 C finely shredded carrots
- 1 C coarsely chopped fresh spinach leaves ( I use frozen)
- 1 C diced cooked chicken breast ( you can use rotisserie chicken)
- 1 (16 oz) pkg ready - to - use gnocchi

Great summer salad
- Salad:
- 1 box or bag rotini (colored or plain)
- 1 pkg pre cut slaw mix
- 1 sm onion, diced
- 1-2 t dill weed or seed
- Dressing:
- 1 Cup sugar
- 1/2 Cup vinegar (white or cider)
- 2 TB prepared mustard
- 2 Cup (16 oz) mayo
- Dill weed or seed to taste
