Crispy Cheddar Chicken

Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces
- Sauce:
- 2 # chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 cup whole milk
- 3 cups cheddar cheese, grated
- 1 tsp dried parsley
- 1 10 oz can cream of chicken soup
- 2 Tbl sour cream
- 2 Tbl butter
Spinach-Artichoke Dip in a Football

For Football: Roll out 1 tube of dough onto cookie sheet lined with parchment paper
- 3 Tubes French bread dough (Pillsbury)
- 1 box frozen spinach, thawed and drained
- 2 15-oz cans artichoke hearts
- 1 8-oz block cream cheese
- 1 1/2 C shredded white Cheddar
- 1/2 C shredded parmesan
- 1/2 C ricotta
- 2 cloves garlic, minced
- kosher salt & pepper to taste
- Bread or crackers for dipping
Cheese Soup - Bavarian

Melt the butter in a saucepan and brown the flour
- 7 oz cheese ( American or cheddar) finely grated
- 6 cups broth (chicken or vegetable)
- 4 T butter
- 4 T flour
- 6 pcs toast
- Ground nutmeg to taste
- Herbs to taste
- salt & pepper to taste
Grilled Rib Eye with Horseradish Sauce

- 2 Tbl butter
- 4 cloves garlic, minced
- 2 Tbl fresh lemon juice
- 4 teas fresh parsley

Vinaigrette: Heat 1 Tbl of the oil in a medium sauté pan over medium heat
- 3 Tbl olive oil
- 8 oz bacon, cut into small dice
- 2 green onions, white & green parts, halved lengthwise & thinly sliced
- 2 shallots, finely diced
- 1/4 cup apple cider vinegar or white wine vinegar
- 2 teas sugar
- 2 teas Dijon mustard
- 2 teas finely chopped fresh thyme leaves
