I double the liquids for this recipe
- 1 T fresh chopped parsley
- 3 green onions, chopped
- 1/2 t salt
- 1/8 t pepper
- 1 C dry white wine
- 1/2 C water
- 2 1/2 # sole fillets
- 3 T butter
- 2 T all purpose flour
- 1 C heavy cream
Vegetable Beef Soup

Great soup for a chilly winter day
- 2 # ground beef
- 1 Large V-8 vegetable juice + 3 cans of water
- 8 0z Acini de Pepe pasta (very tiny pasta)
- 3 stalks celery
- 1 small onion (chopped)
- Large bag frozen vegetables (carrots, peas, etc)
- pearl barley (&/or bay leaves)
- l large can diced tomatoes
- 1 can regular cut green beans (with juice)
- Beef flavored base for taste

This is one of the best chili recipies I've tried
- 1 1/4 # ground beef - 80% lean
- 1 large onion, diced
- 1 can kidney beans
- 1 1# can tomatoes
- 6 T ketchup
- 2 t salt
- 1/4 t pepper
- 1 t chili powder (or to taste)
- 1 T sugar (rounded)
Homemade Buffalo Chicken Dip

Preheat oven to 350F. Remove the skin of chicken and de-bone
- 1 rotisserie chicken, chilled
- 8 oz cream cheese, softened
- 1/2 cup blue cheese dressing
- 1/2 cup hot sauce ( or less to taste)
- 4 oz container crumbled blue cheese

- 1/2 cup celery
- 2 TBL chopped onion
- 5 chicken bouillon cubes
- 2 medium tomatoes, diced

- 6 ripe plum tomatoes
- 5 Tbl olive oil
- Kosher salt & freshly ground black pepper
- 1 small red onion, finely diced
- 2 cloves garlic, finely chopped
- 2 Tbl balsamic vinegar
- 1/4 cup finely chopped fresh basil leaves
- Fresh Corn-Basil Sauce:
- 2 Tbl olive oil
- 1 Spanish onion, coarsely chopped
- 8 ears fresh corn, shucked & kernels removed from the cobs
- 2 (14.5 oz) cans low sodium chicken or vegetable broth
- 2 teas sugar
- Kosher salt & freshly ground black pepper
- 1/4 cup heavy cream
- 12 fresh basil leaves, cut into thin ribbons

Heat oil in large heavy skillet over moderately high heat till hot and almost smoking
- 1/4 C olive oil
- 1/2 # shrimp, peeled & deveined
- 6-8 large garlic cloves
- 1 large shallot, finely chopped
- 1/2 t red pepper flakes
- 1/2 C dry white wine
- 1 t kosher salt or to taste
- 1 T fresh lemon juice
- 5 T unsalted butter
- 3/4 # angel hair pasta
- 1/2 C chopped parsley
- 1/2 T black pepper or to taste
Pecan Chicken Salad

Bake chicken according to package directions
- 4 pecan crusted chicken breasts
- 4 cups field greens, chopped
- 2 cup corn, fresh or frozen
- 1/4 cup gorgonzola cheese, crumbled
- 12 - 16 kalamata olives
- 1/2 cup roasted red pepper
- 4 tsp cilantro, chopped
- 8 lime wedges
- 1/2 cup ranch dressing
