Craisins Salad

This salad is certain to become a new favorite
- 1 head red leaf lettuce
- 1 head green leaf lettuce
- 1 head iceberg lettuce
- 1 (8-oz) pkg shredded mozzarella cheese
- 1 (8-oz) pkg shredded Parmesan cheese
- 1 lb. bacon, cooked and crumbled
- 1 (8-oz) pkg Craisins
- 1 cup sliced almonds, toasted
- 1 recipe Craisins Salad Dressing (see below)
- Craisins Salad Dressing
- 1/2 cup red wine vinegar
- 1 cup sugar
- 1/2 onion chopped
- 1 1/2 teaspoons salt
- 1 teaspoon mustard
- 1 cup salad oil (drizzled in)
Strawberry Limeade

This is a great use for Strawberry Sauce (See Recipe)
- 1 tall glass
- Lots of ice
- Sprite (or Diet Sprite…or Ginger Ale if you’re feeling wild)
- 1 1/2 limes
- 3-4 tablespoons Strawberry Sauce
Citrus-glazed Chicken

A little taste of spring broiled in your oven in the winter
- 1 ½ cups orange juice
- ¼ cup soy sauce
- ¼ cup honey
- 1 Tbsp. minced garlic
- 1 Tbsp. minced fresh ginger
- 1 tsp. lime zest
- ½ tsp. ground red pepper
- 4 chicken breasts or pieces
- Cooking Spray
- 2 Tbsp. all-purpose flour
- (more if needed to thicken)
- ¾ tsp. salt
Lemon Drop Cookies

. Preheat the oven to 375 degrees F
- For the Glaze:
- 1 1/4 c. all purpose flour
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/2 c. unsalted butter, at room temperature
- 1/4 c. powdered sugar
- 2 Tbsp granulated sugar
- Zest of 1 large lemon (2 if they are small)
- Juice of 1/2 lemon (about 2 Tbsp)
- 1/2 c. powdered sugar
- Juice of about 1 lemon
Meat Loaf Glazed Bacon-Wrapped

1. For the glaze: Mix all ingredients in small saucepan and bring to a simmer

- 1/2 cup chili sauce (or substitute ketchup, but I liked chili sauce)
- 4 tablespoons brown sugar
- 4 teaspoons cider vinegar (or white vinegar in a pinch)
- Meat Loaf
- 2 teaspoons vegetable oil
- 1 medium onion , chopped medium
- 2 medium cloves garlic , minced
- 2 large eggs
- 1/2 teaspoon dried thyme
- 1 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon hot sauce
- 1/2 cup plain yogurt (or whole milk)
- 1 pound ground beef chuck
- 1/2 pound ground pork
- 1/2 pound ground veal (I used more pork instead of veal)
- 2/3 cup Saltine crackers , crushed (about 18), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
- 1/3 cup minced fresh parsley leaves
- 6 – 8 ounces bacon , thin sliced (8 to 12 slices, depending on loaf shape)
Slow Cooker Lasagna

- 8 lasagna noodles, uncooked
- 1 lb. ground beef
- 1 tsp. Italian seasoning
- 1 (28oz) jar of spaghetti sauce
- 1/3 C. Water
- 15 oz. ricotta cheese
- 2 C. shredded mozzarella cheese
Lion House Dinner Rolls

In large bowl or electric mixer, combine water and milk powder; stir until milk dissolves
- •2 cups warm water (110 to 115 degrees)
- •2/3 cup nonfat dry milk (instant or non-instant)
- •2 tablespoons dry yeast
- •1/4 cup sugar
- •2 teaspoons salt
- •1/3 cup butter, shortening, or margarine
- •1 egg
- •5 to 5 1/2 cups all-purpose flour, or bread flour
Slow Cooker Potatoes

A fantastic side dish for a potluck or large family party
- 4 cups potatoes, peeled, diced and cooked
- 10 3/4 oz. can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup butter, melted
- 1/4 cup chopped onions
- 1/2 teaspoon garlic salt
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Beef Stroganoff

Brown meat with oil in a skillet
- 1 lb. stew meat
- 1 Tbsp. EVOO
- 1/2 chopped onions
- 1/2 C. chopped celery
- 1 (10 3/4 oz.) can cream of celery soup
- 1 (4oz) Can mushrooms, drained
- 1 cup water
- 2 beef bouillon cubes
- 1 C. Sour cream
- 1/4 tsp. garlic salt
Orange Glazed Carrots

Place an inch of water in a saucepan and add carrots
- 1 pound fresh carrots, cut into slices
- 1 Tablespoon butter
- 1 ⁄8 cup orange juice
- 1 Tablespoon brown sugar
- 1 Tablespoon fresh parsley, finely chopped
