Holiday Meatballs

To keep this recipe easy, pre-purchase meatballs from Costco then just make sauce
- 1 1/2 lbs. ground beef
- 3/4 cup cracker crumbs
- 1/2 cup chopped onion
- 2/3 cup sego milk
- 1 teaspoon salt
- Mix together and form in balls. Roll in flour and brown.
- Cover with sauce
- 1 (4 oz) can pineapple chunks
- 2 Tablespoons corn starch
- 1/4 cup vinegar
- 1/2 cup brown sugar
- 2 Tablespoons soy sauce
- 2 Tablespoons lemon juice
- green pepper and pimento as desired for holiday color
- (I usually 4 x's the sauce recipe for office party)
Meat Loaf, Bacon-Wrapped, Glazed

I don't even like Meat Loaf but this is good enough to change my mind
- Glaze
- 1/2 cup chili sauce (or substitute ketchup, but I liked chili sauce)
- 4 tablespoons brown sugar
- 4 teaspoons cider vinegar (or white vinegar in a pinch)
- Meat Loaf
- 2 teaspoons vegetable oil
- 1 medium onion , chopped medium
- 2 medium cloves garlic , minced
- 2 large eggs
- 1/2 teaspoon dried thyme
- 1 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon hot sauce
- 1/2 cup plain yogurt (or whole milk)
- 1 pound ground beef chuck
- 1/2 pound ground pork
- 1/2 pound ground veal (I used more pork instead of veal)
- 2/3 cup Saltine crackers , crushed (about 18), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
- 1/3 cup minced fresh parsley leaves
- 6 – 8 ounces bacon , thin sliced (8 to 12 slices, depending on loaf shape)
Sun-Dried Tomato Olive Bread

In a small bowl, stir together yeast and sugar
- 1 package active dry or quick rise yeast
- 3 tablespoons unbleached cane sugar
- 1 1/4 cups warm water
- 8 sun-dried tomatoes snipped into small
- bits with scissors
- 4 cups unbleached flour
- 2 teaspoons salt
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1 1/2 teaspoons garlic powder
- 1 teaspoon dried parsley
- 1/2 cup black olives chopped
- 3 tablespoons olive oil
- Cornmeal as needed

- Ingredients:
- 2 1/4 tsp yeast
- 1 1/4 cups warm water
- Pinch of sugar
- 1/4 cup packed brown sugar
- 2 cups flour
- 1 cup water
- 1 tbsp baking soda
- Course salt (optional)
- 2 tbsp butter, melted (optional)
- Method:
- In small bowl combine yeast & warm water w/a pinch of sugar
- Let stand for about 5 min while you prepare next step
- In a large bowl, mix brown sugar, 1 cup flour, and yeast mixture. (when it's ready)
- Then stir in enough flour to make a soft dough
- Turn dough onto a well floured surface and knead for about 3 min
- Cover and let rest for 20 min
- Cut dough into 12 pieces
- Roll each piece into a 12-15 inch rope and shape into a pretzel
- In shallow bowl mix 1 tbsp baking soda w/1 cup water
- Dip each finished pretzel in water quickly, shaking off excess
- Place on greased baking sheet. (May need to reshape) Sprinkle w/salt if desired
- Bake at 425 degrees for 6 min or till golden brown
- Brush melted butter on top or serve w/your favorite dip

- 2 Tablespoons olive oil
- 2 small red onions, cut into quarters
- 1 lb. new potatoes, cut into quarters

An update to the classic cookie recipe everyone turns to in a pinch
- for rolling the cookies:
- 2 1/2 c. all purpose flour
- 1 t. baking soda
- 2 t. cream of tartar
- 1/2 t. ground cinnamon
- 1/2 t. sea salt
- 1 c. unsalted butter, sliced
- 1 1/4 c. dark brown sugar
- 1/2 c. granulated sugar
- 1 large egg
- 1 egg yolk
- 1 T vanilla extract
- 1 T plain greek yogurt
- 1 c. caramel balls
- 1/4 c. granulated sugar
- 2 t. ground cinnamon
- sea salt for sprinkling on the cookies
