- 1 lb. fresh green beans
- 2 Tbsp. olive oil
- 2 Tbsp. grated parmesan cheese
- 2 Tbsp. panko bread crumbs
- 1/2 tsp. kosher salt

Instructions Preheat oven to 350°F
- 1 pound lean ground beef
- 1/2 cup onion, chopped
- 1/4 cup ketchup
- 1/4 cup barbecue sauce
- 1/2 cup brown sugar
- 1 tablespoon molasses
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1-16 ounce can butter beans, drained
- 1-16 ounce can kidney beans, drained
- 1-16 ounce can pinto beans, drained
- 1-16 ounce can pork and beans, not drained
- 1/2 pound bacon, cooked and crumbled
Honey-Lime Chicken Tenders

A wonderful sweet lime flavor
- I use about 12 medium-sized chicken tenders (boneless, skinless)
- lime, peel grated, juiced
- 2 tbsp. honey
- 2 tsp. canola oil
- 2 tsp. steak sauce
- 1 lb pkg. chicken tenderloins (about 12)
- Green onion, chopped
Meatloaf Sauce

Really good on meatloaf. Also good on any beef preparation
- 1 tsp mustard
- 1/4 C brown sugar
- 1 Tbs Worcestershire Sauce
- 1/3 C ketchup
Tomato Salsa

A family favorite and easy to throw together
- 4 garlic cloves, chopped
- 4 small tomatoes, peeled, chopped (2 C). It's ok to leave the peel on if you prefer; this makes the salsa "chunkier".
- 1/2 C finely chopped onion
- 1/2 C finely chopped green pepper
- 1-2 jalapeno peppers, seeded, minced
- 1 TBS sugar
- 1 tsp salt
- 1/2-1 C chopped fresh cilantro
- 1 tsp oregano, 2 TBS oil
- 1 TBS vinegar
- 6-8 oz tomato juice (can substitute V8 spicy for an amped-up flavor)
- 1/2 tomatillo (optional but it does add a nice "tang" to the salsa)
Best Tuna Casserole

Bring a large pot of lightly salted water to a boil
- 1 (12 ounce) package egg noodles
- 1/4 cup chopped onion
- 2 cups shredded Cheddar cheese
- 1 cup frozen green peas
- 2 (6 ounce) cans tuna, drained
- 2 (10.75 ounce) cans condensed cream of mushroom soup
- 1/2 (4.5 ounce) can sliced mushrooms
- 1 cup crushed potato chips
Mexican Chicken Stew

- 1 tablespoon olive oil
- 2 (14.5-ounce) cans diced tomatoes with green chilies (Rotel)
- 1/2 cup onion, finely chopped green peppers
- 3 cloves garlic, minced
- 4 cups shredded cooked turkey or chicken
- .2 teaspoons chili powder
- 1 (16-ounce) can pinto beans, drained
- 1/2 teaspoon cumin
- 1 (15.25-ounce) can corn, with liquid
- 2 cups water
- 1/2 cup light sour cream
- 1 (15-ounce) can tomato sauce
- 1/2 cup chopped fresh cilantro (optional)
- shredded cheese and tortilla chips (optional)
Burger Foil Packs

Lay four 12"-x-12" pieces of foil out on a flat surface and spray with cooking spray
- 1 lb. lean ground beef
- 1 large egg
- 1/3 c. panko bread crumbs
- 2 tbsp. barbecue sauce
- 1 tsp. garlic powder
- kosher salt
- Freshly ground black pepper
- 1 c. broccoli florets
- 1 c. baby carrots
- 1 c. cubed potatoes
- 1/2 onion, chopped
- 3 tbsp. extra-virgin olive oil
- 1 tsp. Italian seasoning
- Ketchup, BBQ sauce, or ranch dressing, for serving
Cold Crab Dip

Mix the ingredients together, adding the crab meat last and stirring gently
- 2 (8-ounce) packages cream cheese
- 1/2 cup sour cream
- 3 tablespoons minced fresh chives or green onions
- 2 tablespoons parsley
- 1 tablespoon prepared horseradish
- 4 teaspoons fresh lemon juice
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 pound fresh lump crab meat, picked free of shell

- Flauta Sauce:
- Flautas
- 1 1/2 pounds ground beef
- 1 small onion, chopped
- 1 small garlic clove, minced
- 1 4 0z can mild green chilies, chopped
- Salt and pepper to taste
- Grated cheddar or Mexican Mix cheese
- White flour tortillas (a healthy substitute is wheat tortillas)
- 1 can (15 or 16 oz) tomatoes (chopped/diced)
- 1 medium onion, minced/finely chopped
- 1 1/2 tsp oregano
- 1 TBS vinegar
- 2 tsp salt
- 2 cans (4 oz) green chilies, chopped. Use mild/hot to your taste.
