Aspen's Orange Julius Recipe

Our Granddaughter got this recipe when she was about 12 years old
- 6 oz frozen orange juice
- 1 C milk
- 1 C water
- 1/4 C sugar
- 1 tsp vanilla extract
- 8 ice cubes (approx.)
- Note: Ingredients may be changed adjusted for fat free, 2%, whole milk.

Instructions Cut the tops off of the peppers and scrape out the ribs and seeds
- 6 bell peppers
- 1 cup uncooked quinoa, rinsed
- 1 14 ounce can black beans, rinsed and drained
- 1 14 ounce can refried beans
- 1 1/2 cups red enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1/2 teaspoon garlic salt
- 1 1/2 cups shredded Pepperjack cheese
- toppings! cilantro, avocado, sour cream, etc.
New York Strip Steak with Red Wine Sauce

Heat half the oil in a large skillet over medium-high heat
- 3 Tbs vegetable oil
- 4 New York strip steads (10-11 oz ea.; about 1 " thick), fat trimmed, patted dry.
- 3/4 C full-bodied red wine, such as Syrah or Cabernet Sauvignon
- 1/2 C beef stock
- 3 Tbs cold butter, cut into pieces
- 1 Tbs plus 1 tsp Dijon mustard
Turkey Soup from leftover turkey carcass

Place the turkey carcass in a large stockpot
- 1 leftover whole roasted turkey carcass, with bones and skin but most meat removed
- 1 medium onion, quartered
- 1 medium carrot, peeled and sliced
- 2 medium stalks celery, rinsed and chopped
- 2 bay leaves
- 1 tablespoon kosher salt
- Freshly ground black pepper
- Water, to cover
- 2 yellow onions, chopped
- 1 cup diced potatoes
- 1 large turnip (or parsnip), cut into cubes
- 2 cups sweet peas
- 2 cups baby carrots
- 1 1/2 cups cut green beans (fresh or frozen)
- 1/2 cup green bell pepper
- 1/2 cup red bell pepper
- 1 cup celery
- 2 cloves garlic, chopped
- 1 cup alphabets, acini di pepe, orzo or other small pasta
- Leftover turkey meat, diced
- 1/4 cup chiffonade fresh basil
- 1/4 cup thyme leaves
- 1/4 cup chiffonade sage leaves
- 1 cup finely chopped fresh parsley leaves
- Salt and pepper to taste
- Loaf of crusty bread
Grilled Chuck Roast

Heat olive oil in saute pan and when warm, but not too hot, toss in garlic
- 1 (3-4 lb) boneless chuck roast, about 2 inches thick and trimmed of excess fat.
- 4 cloves garlic, inced
- 1/3 C olive oil
- 2 tsp fresh rosemary, finely chopped
- 2 tsp soy sauce
- 2 tsp Dijon mustard
- 1/4 C red wine vinegar
- 1/4 C sherry
- 2 Tbs catsup
- 1 1/2 tsp commercial steak sauce
- 1/2 tsp Worcestershire sauce
Tangy Black Eyed Pea Salad

This salad goes well with anything
- 3 TBS red wine vinegar
- 2 TBS olive oil
- 2 TBS fresh cilantro (optional)
- 1 clove garlic, minced
- 2 (15.5 ounce) cans black-eyed peas, drained.
- 1/2 cup purple onion, diced
- 1 small green bell pepper, diced
- 1 cup yellow corn (frozen or fresh)
Easy Chocolate Caramel Pecan Pie

This delicious pie is made from store-bought ingredients
- 25 caramels (example: Kraft Caramel squares)
- 2 TBS milk
- 1 C chopped toasted pecans
- 1 Graham Cracker Pie crust
- 1 pkg. (8 squares) semi-sweet baking chocolate
- 1 tub (8 oz) whipped topping, divided in half
Lemon Barbecued Chicken - Diabetic Friendly

Mix the Worcestershire sauce, lemon zest, salt, dry mustard, and oregano in a small bowl
- 2 teaspoons Worcestershire sauce
- 1 teaspoon grated lemon zest
- 1 teaspoon salt
- 1 ⁄2 teaspoon dry mustard
- 1 ⁄2 teaspoon dried oregano
- 1 ⁄2 cup fresh lemon juice
- 1 ⁄2 cup olive oil or 1⁄2 cup canola oil or 1⁄2 cup corn oil
- 1 green onion, with green top chopped
- 6 chicken breast halves (2-1/2 to 3 pounds) or 6 chicken legs and 6 chicken thighs (2-1/2 to 3 pounds)
Mexican Multi-layer Dip

In a medium bowl, mix the sour cream with an electric mixer until smooth and creamy
- 1 (16 oz) container sour cream
- 1 TBS taco seasoning mix
- 1 C salsa
- 1 C canned black beans, drained and rinsed.
- 1 C shredded cheddar cheese
- 1/2 C chopped onion
- 2 TBS sliced and pitted black olives
- vegetables cut in pieces, or tortilla chips
Crab Dip

Easy
- 1 8-oz pkg. cream cheese, softened
- 2 TBS Thousand Island Dressing
- 2 TBS milk
- 1 can (6 oz) crab meat, drained, flaked
- 1/4 cup chopped red pepper
- 1 TBS lemon juice
- 1 TBS chopped fresh parsley
- Crackers (any type of your choice)
