Hearty Busy-Day Stew

Directions Combine all ingredients except the cornstarch and water, into a large dutch oven/pan
- 1 -1/2 pounds beef stew meat
- 1 -1/2 pounds potatoes (about 3 medium), peeled and cut into 1-inch cubes
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (14-1/2 ounces) beef broth
- 2 -1/2 cups fresh baby carrots (about 12 ounces)
- 1 large tomato, chopped
- 1 medium onion, chopped
- 2 tablespoons taco seasoning
- 2 garlic cloves, minced
- 1 /2 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Baked Garlic Brown Sugar Chicken

Preheat oven to 500 F and lightly grease a casserole dish
- 4 boneless skinless chicken breasts
- 4 garlic cloves, minced
- 4 TBS brown sugar
- 3 tsp olive oil
Black Bean Brownies

These healthy brownies are rich and chocolaty! You'd never know that black beans were used!
- Cooking spray
- 1/2 ½ cup canned black beans, rinsed and drained
- 1/4 ¼ cup black coffee, strong
- 1/2 ½ cup unsalted butter
- 4 oz bittersweet chocolate
- 4 large eggs
- 1 1/4 1¼ cup sugar
- 1 tsp vanilla extract
- 1/8 ⅛ tsp table salt
- 1 cup all-purpose flour
Cheesy Garlic Biscuits (copy of Red Lobster's biscuits)

This recipe has been circulated as a 'copy' or rendition of the famous Red Lobster cheese biscuits
- 2 C Bisquick baking mix (or equivalent)
- 2/3 C milk (any-1%,2%,whole,fat free)
- 1/2 C shredded cheddar cheese
- 1/2 C butter, melted
- 1/4 tsp garlic powder (or to taste; just be careful to not add too much)
Pickled Jalapeno Peppers

These easy refrigerator pickled peppers are also suitable for canning
- ADD TO EACH PINT JAR:
- 2 lbs. jalapenos
- 2-1/4 cups vinegar (white distilled, apple cider, or a combination of the two)
- 2-1/4 cups water
- 2 tablespoons sugar or honey (optional)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon whole black pepper corns
- 1/4 teaspoon whole cumin seeds
- 1/4 teaspoon whole coriander seeds
- 1 bay leaf
- 1 whole garlic clove, peeled
- 1/8 teaspoon Pickle Crisp granules (optional)
Sausage Cabbage Soup Recipe

In a 3-qt. saucepan, saute onion in oil and butter until tender
- 1 medium onion, chopped
- 1 tablespoon canola oil
- 1 tablespoon butter
- 2 medium carrots, thinly sliced and halved
- 1 celery rib, thinly sliced
- 1 teaspoon caraway seeds
- 2 cups water
- 2 cups chopped cabbage
- 1/2 pound fully cooked smoked kielbasa or Polish sausage, halved and cut into 1/4-inch slices
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 tablespoon brown sugar
- 1 can (15 ounces) white kidney beans, rinsed and drained
- 1 tablespoon white vinegar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Minced fresh parsley

- 2 C elbow macaroni
- 1/2 C minced onion
- 1/2 C chopped green pepper
- 2 oz can tomato sauce
- 1 tsp salt
- 1/2 C water (additional liquid may be required)
- 14 tsp pepper
- 2 TBS Worcestershire Sauce
- Note: For a flavor boost replace the water with chicken or beef broth.
