Ice Cream Fudge

This old recipe uses ice cream instead of marshmallows to make a delicious fudge candy
- 1 lb almond bark
- 1 lb chocolate bark
- 1 pkg chocolate chips (12 oz)
- 1 pint ice cream (vanilla; however you could experiment with different flavors)

Olive Garden Pasta e Fagioli Soup Copycat Recipe - Cooking Classy

Say hello to soup season and another restaurant copycat recipe you can make at home
- 1 lb lean ground beef or mild Italian sausage (I've tried both and like either)
- 2 Tbsp extra virgin olive oil, divided
- 1 cup diced carrots (about 2 medium, you can cut them into matchsticks if desired)
- 1 cup diced celery (about 3 stalks)
- 3/4 cup chopped yellow onion (about 1/2 of a large)
- 1 large clove garlic, finely minced
- 3 (8 oz) cans tomato sauce
- 3 - 4 cups beef broth (chicken broth works fine too)
- 1 cup water
- 1 (15 oz) can diced tomatoes, undrained
- 1 Tbsp granulated sugar
- 1 1/2 tsp dried basil
- 1 tsp dried oregano
- 3/4 tsp dried thyme
- 1/2 tsp dried marjoram
- Salt and freshly ground black pepper to taste
- 1 scant cup ditalini pasta, uncooked
- 1 (15 oz) can dark red kidney beans, drained and rinsed
- 1 (15 oz) can great northern beans, drained and rinsed
- Romano cheese (I also like it with parmesan), for serving
Best Salisbury Steak

Using ground beef and a tangy sauce; can't beat it!
- Patties:
- 2 pounds lean ground beef
- 1 medium onion, finely minced
- 1/2 green bell pepper, finely minced
- 1 stalk celery, finely minced
- 2 Tablespoons snipped parsley, minced
- 1 clove garlic, finely minced
- 1/2 teaspoon dry mustard
- 1/2 teaspoon dried marjoram, crushed
- 1/2 teaspoon dried thyme, crushed
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Sauce:
- 6 Tablespoons butter
- 8 ounces sliced fresh mushrooms (about 2 cups)
- 2 teaspoons flour
- 2/3 cup chili sauce (such as Heinz chili sauce or equivalent)
- 1/2 cup beef broth
- 2 teaspoons lemon juice
- 2 teaspoons Worcestershire sauce
- dash of bottled hot pepper sauce
Lemony Toasted Quinoa & Herb Salad

- 2 tsp olive oil, extra-virgin, divided
- 10 oz uncooked quinoa
- 1 1/4 1¼ cups water
- 1/4 ¼ cup fresh lemon juice, about the juice of 2 lemons
- 2 tsp lemon zest, about the zest of 1 lemon
- 1/4 ¼ cups parsley, fresh, chopped
- 1/4 ¼ cup watercress, fresh, chopped
- 1 Tbsp thyme, fresh, chopped
- 2 medium stalks celery, diced
- 1 medium cucumber, diced
Loaded Potato Soup

Directions: Add chicken broth, salt and pepper
- 4 lbs (red skin, russet or yukon gold), peeled and cubed.
- 1/2 C onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 2 (14 oz) cans chicken broth
- 2 tsp salt
- 1/2 tsp pepper
- 2 C half & half
- Garnish: shredded cheddar cheese, cooked and crumbled bacon, sliced green oinins

- 1/4 Cup Shortening/butter/margarine (your preference; however, butter gives the best flavor).
- 1 3/4 Cup Sugar
- 1 egg, beaten (if you want you can use 1/3 C apple sauce instead of an egg)
