Hamburger Soup

Fast, easy, "poor man's" soup
- 1 tbsp. extra-virgin olive oil
- 1 lb. ground beef
- Kosher salt
- Freshly ground black pepper
- 1 small yellow onion, chopped
- 2 medium yukon gold potatoes, peeled and cut into 1/2" cubes
- 2 medium carrots, thinly sliced coins
- 2 stalks celery, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp. tomato paste
- 4 c. low-sodium beef or chicken broth
- 1 (14.5-oz.) can diced tomatoes
- 1 tsp. Italian seasoning
- 1/2 c. frozen corn
- 1/2 tsp. yellow mustard
- Freshly chopped parsley, for garnish
- Bread and butter pickles, for serving
Marinara

In a large pot, heat the oil over a medium-high heat
- 1/4 cup olive oil
- 1 small onion, finely chopped
- 1 garlic clove, finely chopped
- 1 celery stalks, finely chopped
- 1 carrots, peeled and finely chopped
- Salt and pepper to taste
- 8 roma tomatoes, chopped (or a 32-ounce can crushed tomatoes)
- 2 dried bay leaves
Crab Meat Dip

- 2 (7 oz.) cans crab meat
- 1 (8 oz.) package cream cheese
- 1 cup mayonnaise
- 1 /2 cup sour cream
- 1/2 teaspoon Old Bay seasoning
- 1 tablespoon Worcestershire
- 1/4 teaspoon Tabasco sauce
- dash of cayenne pepper
- salt to taste
- 3 cloves garlic, pressed
Tortellini Soup

Put olive oil in the bottom of a large soup/stock pan
- 3 TBS olive oil
- 1 clove garlic, minced
- 3 stalks celery, chopped
- 3 carrots, peeled and chopped
- 1 onion, diced
- 10 oz box frozen spinach (unthawed)
- 2 cans cream of chicken soup
- 2 cans water
- 32 oz chicken broth
- Family size pkg of cheese or chicken tortellini, half cooked
Tuna Bake

Not your conventional tuna casserole! I cut this out from a magazine many years ago
- 1 can (10 3/4 oz) condensed cream of celery soup
- 3 eggs, beaten
- 1 can (about 6 12 oz) tuna, drained
- 1/4 C chopped pimiento
- 1 1/2 C biscuit mix
- 1/3 C very hot water
- 1 C shredded Monterey Jack cheese
Baked Pasta Casserole

Cook lean turkey in large pot until browned and crumbled
- 1 1/4 lbs lean ground turkey
- 1 C chopped onion
- 1 C chopped fresh mushrooms
- 1/2 C chopped bell pepper, any color
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 C water
- 2 (14.5 oz) cans diced tomatoes
- 1 (6 oz) can tomato paste
- 8 oz whole-wheat elbow macaroni pasta
- 1/4 C grated fresh Parmesan cheese
- 1/4 C grated mozzarella cheese
Pico de Gallo

Dice jalapenos in 1/4-inch pieces (add more if you want a spicier taste)
- 3 lb tomatoes
- 1 C diced onion
- 1-2 diced, seeded fresh jalapenos
- 1/2 bunch cilantro (3 oz)
- 1 tsp salt
- 1 tsp garlic powder
Slow Cook BBQ Pulled Chicken

This slow cooker recipe can be assembled in the morning and ready in time for an afternoon barbecue
- 1 (14.5 oz.) can no-salt-added diced tomatoes
- 1/4 cup apple cider vinegar
- 2 tbsp. honey
- 1 tbsp. smoked paprika
- 1 tbsp. soy sauce
- 1 tbsp. Dijon mustard
- 1/4 tsp. red pepper flakes
- 4 boneless, skinless chicken breasts (2 lbs.)
- Coarse salt and freshly ground black pepper
Dill-Cucumber Dip

A yummy Greek syle dip for vegies or chips
- 1 large onion(s)
- 2/3 cup(s) low-fat plain yogurt
- 8 Tbsp fat-free cream cheese
- 1/4 tsp table salt
- 1/8 tsp black pepper, or to taste
- 2 tsp dill, fresh, or 1 tsp dried dill weed
- 2 large cucumber(s), peeled and cut into bite-size cubes

- This is a conversion chart to help convert mini to large marshmallows or to convert marshmallows to marshmallow creme.
- This chart is based on Kraft Jet-Puffed marshmallows. Should be close enough for any brand.
- Very helpful if you want to use a specific marshmallow product but your recipe calls out a different kind. :)
