Slow Cooker Enchilada Stack - Damn Delicious

The easiest enchiladas you will ever make
- 1 pound ground beef
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels, frozen, canned or roasted
- 1 cup salsa, homemade or store-bought
- 1 (4.5-ounce) can Old El Paso™ chopped green chiles, drained
- 2 teaspoons Old El Paso™ taco seasoning mix
- 1 (10-ounce) can Old El Paso™ mild enchilada sauce, divided
- 4 9-inch flour tortillas
- 2 cups shredded Mexican blend cheese, divided
- 1 avocado, halved, seeded, peeled and diced, for serving
- 1 Roma tomato, diced, for serving
- 2 tablespoons chopped fresh cilantro leaves
Oven-Fried Chicken Tenders

1 Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray
- 1/4 cup Gold Medal™ all-purpose flour
- 1 egg
- 1 tablespoon water
- 1 cup Progresso™ plain or Italian style panko crispy bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 package (about 1 1/4 lb) chicken breast tenders
- Favorite dipping sauce, if desired
Best Baked Beans

This is a favorite recipe from Jim's Sister, Margie
- 1 large (approx 53 oz) can of pork and beans
- 1/2 tsp liquid smoke
- 1/4 C catsup
- 2 TBS molasses
- 2 TBS brown sugar
- 2 TBS bacon drippings
- 1/2 minced onion
- Salt to taste
- 3 drops hot pepper sauce or red pepper
- 1 TBS dry mustard
- Bacon strips (for covering top)

Chocolate Bundt Cake

This cake is like a rich devil’s food cake but it's made light by using pureed, canned sauerkraut
- Cooking spray
- 2 cups all-purpose flour
- 1 1/3 1⅓ cup sugar
- 1 1/2 1½ tsp baking soda
- 2/3 ⅔ cup unsweetened cocoa
- 1/2 ½ cup butter, melted
- 1 1/2 1½ cup hot water
- 1 tsp vanilla extract
- 1 cup sauerkraut, pureed until smooth
- 1 tsp unsweetened cocoa
Blueberry Cake

Preheat oven to 350 degrees
- 1/2 C (1 stick) unsalted butter
- 2 tsp finely grated lemon rind
- 7/8 C plus 1 TBS sugar, divided
- 1 egg, room temperature
- 1 tsp vanilla extract
- 2 C fresh blueberries
- 2 C all-purpose flour, divided
- 2 tsp baking powder
- 1 tsp coarse salt
- 1/2 C buttermilk (optional: can substitute 1/2 C milk with 1 tsp vinegar mixed in for buttermilk).
Korean-Style Short Ribs

1.In a large bowl, whisk together the soy sauce, 1 cup water, the vinegars, brown sugar, Sriracha, and pepper
- I cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons white vinegar
- 1/3 cup tightly packed dark brown sugar
- 3 tablespoons Sriracha sauce, plus more for serving
- 1 tablespoon ground black pepper
- 1/2 large yellow onion, chopped
- 1 bunch green onions, white and tender green parts only, thinly sliced
- 8 to 10 garlic cloves, chopped
- 3 pounds Korean-style short ribs
- Steamed rice and hoisin sauce for serving
Hamburger Soup

Serve this easy-to-make soup with a side salad and warm bread
- 2 medium onions, chopped
- 1 garlic clove, minced
- 2 TBS olive oil, vegetable oil, or butter
- 3 lbs lean ground beef
- 3 (14 1/2 oz) cans beef stock
- 1128 oz) can diced tomatoes with green chilies
- 11 (15 oz) can tomato sauce
- 1 C diced unpeeled potatoes
- 1 C diced peeled carrots
- 1 C diced celery
- 1 C dry red wine
- 1/2 tsp dried basil
- 1 (14 1/2 oz) can French style green beans
- 1 TBS chopped parsley
- Salt and pepper to taste
Broccoli Salad

- Salad:
- 1 head broccoli
- 1/2 C raisins
- 1/2 C cashews
- 1/2 medium red onion, chopped
- 1 lb bacon, chopped and cooked to a crisp consistency
- Dressing:
- 1 C mayonnaise
- 1/2 C sugar
- 2 TBS vinegar
