Smothered Baked Chicken Burritos

Prepare Mexican Chicken according to recipe directions
- 1 Recipe Slow Cooker Mexican Chicken
- 6 burrito size tortillas (I prefer raw/undercooked tortillas)*
- 1 cup shredded sharp cheddar cheese
- olive oil or nonstick cooking spray
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 tablespoons flour
- 2 cups low sodium chicken broth, warmed
- 1/2 teaspoon cumin
- 1/4-1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup sour cream
- 1/2 4 oz. can mild chopped green chilies, or more to taste
- 1/2 cup shredded sharp cheddar cheese
- Hot sauce to taste (optional)

Turkey Pot Pie

Can substitute chicken for turkey
- 1 C water
- 2 TBS chicken soup base or chicken broth
- 1/2 C chopped celery
- 1/2 C chopped onion
- 1 can (12 oz) evaporated skim milk
- 1/4 C all-purpose flour
- 2 C chopped turkey or chicken breast
- 1 C frozen mixed vegetables, thawed
- 2 tsp poultry seasoning
- Black pepper to taste
- 4 sheets phyllo dough
- Cooking Spray
Crock Pot Balsamic Chicken Thighs

Instructions Combine the first five dry spices in a small bowl and spread over chicken on both sides

- 1-3/4 cups water
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 package (6 ounces) fresh baby spinach, coarsely chopped
- 2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
- 1/4 teaspoon pepper
- Dash crushed red pepper flakes

- 12 oz uncooked boneless, skinless chicken breast, thinly sliced
- 2 tsp olive oil
- 1 Tbsp fresh lemon juice
- 1 1/2 1½ cups fat-free, reduced sodium chicken broth, divided
- 2 tsp minced garlic
- s 2½ cups broccoli, small florets
- 2 tsp lemon zest, or more to taste

- One cup water
- Three -quarters cup ketchup One-quarter cup apple cider vinegar
- Two ribs of celery, finely chopped
- Two tablespoons finely chopped white onion
- One -half teaspoon minced garlic
- One -half stick of butter (please, no margarine here!)

- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- kosher salt and freshly ground pepper, to taste
- Soup:
- 2 (32 oz.) boxes low-sodium chicken stock
- 2 cups noodles
- 1/2 cup fresh dill
- 8 cloves garlic, minced
- 3 stalks celery, diced
- 2 large carrots, peeled and diced
- 2 sprigs rosemary
- 1 large onion, finely chopped
- 1 bay leaf
- 1 lemon, juiced
- 1/4 teaspoon red pepper flakes
- olive oil, as needed
