Greek Chicken Salad

Got this off a bottle of Athenos Greek Salad Dressing
- 1 lb. boneless skinless chicken breasts
- 1 pkg. (10 oz.) mixed salad greens
- 3 plum tomatoes, cut into wedges
- 3/4 C sliced peeled cucumbers
- 3/4 C kalamata olives, coarsley chopped
- 1/2 C thinly sliced red onion
- 1/2 C Athenos Greek Vinaigrette Dressing (or equivalent)
- 1 pkg (4 oz.) Athenos Traditional Crumbled Feta Cheese (or equivalent)
- 2 Tbs chopped fresh oregano
Sage Chicken and Red Potatoes

Heat the oil in a large nonstick saucepan over medium heat
- 2 tsp olive oil, extra-virgin
- 1 large red onion(s), chopped
- 3 stalk(s) celery, diced (medium)
- 2 ciove(s) garlic ciove(s), minced (medium) 1 Tbsp all-purpose flour
- 1 cup(s) reduced-sodium chicken broth
- 1 1/2 pound(s) skinless chicken drumstick, (about 6114 drumsticks) 1 pound(s) uncooked red potatoes, cut into quarters
- 1 pound(s) baby carrots
- 1 leaf/leaves bay leaf
- 1/2 tsp table salt
- 1/4 tsp black pepper, freshly ground 1/2 cup(s) parsley, fresh, chopped
- 1 tsp dried sage, or 1 tablespoons fresh, chopped 1/8 tsp lemon zest, 1 strip
- 2 tsp fresh lemon juice
30 Minute Beef Bourguignon

Place pearl onions in a small microwave-proof bowl and cover lightly with a paper towel
- 1 cup frozen pearl onions
- 1 pound beef tenderloin, cut into roughly 2-inch chunks
- 1 tablespoon clarified butter or canola/safflower oil (or other neutral high smoke point oil)
- 1 bacon slice, finely chopped (or substitute pancetta)
- 1 10-ounce package of cremini mushrooms, quartered
- 2 large garlic cloves, finely chopped
- 1 teaspoon chopped fresh thyme
- pinch of sugar
- 1 tablespoon tomato paste
- 1/2 cup earthy, good-quality red wine (Cote du Rhone, Burgundy, or Pinot Noir)
- 1 cup low-sodium beef broth
- 2 tablespoons water
- 1 tablespoon all-purpose flour
- fresh thyme sprigs (to garnish)
Raisin Oat Muffins

Preheat oven to 400 F. Spray 18 medium muffin cups with nonstick cooking spray or line with paper liners
- Topping:
- Non-stick cooking spray
- 3/4 C whole wheat flour
- 3/4 C all-purpose flour
- 1 C uncooked oats (quick or old-fashioned)
- 2 1/2 tsp baking powder
- 1/2 C granulated sugar
- 1 TBS finely grated orange rind
- 1 egg, slightly beaten
- 1 C light sour cream
- 2 TBS vegetable oil
- 3/4 C orange juice
- 3/4 C golden raisins
- 1/4 C uncooked oats (quick or old-fashioned)
- 3 TBS brown sugar
- 1 TBS finely grated orange rind
- 1 TBS butter, melted
Italian Sausage Rigatoni

Place sausage and onion in a large skillet
- 1/2 pound hot Italian sausage (bulk, or squeeze from casings)
- 2/3 cup sliced yellow onion (15-ounce) can diced tomatoes, undrained
- l/2 teaspoon dried basil
- (2 l/4-ounce) can sliced black olives, drained
- l/2 cup heavy cream
- 12 ounces rigatoni pasta, cooked according to package directions
- Freshly grated Parmesan cheese (optional)
Beef Jerkey

Make your own jerkey in your oven
- Marinade:
- 2 lbs beef (rump roast or round steak is best), sliced APPROX. 1/2" wide X 1/4" thick X 7" long (adjust measurement as necessary).
- 1/2 C soy sauce
- 1 TBS Worcestershire sauce
- 1 TBS course ground pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 TBS Liquid Smoke
Best Steak Marinade

This will give you enough marinade for about 4 to 5 lbs
- 1/3 cup soy sauce
- 1 heaping tablespoon brown sugar
- 1/2 cup extra virgin olive oil
- 1/3 cup fresh lemon juice
- 1/4 cup Worcestershire sauce
- 1 1/2 tablespoons garlic powder
- 3 tablespoons dried basil
- 1 1/2 tablespoons dried parsley flakes
- 1 teaspoon ground pepper
- 1/4 teaspoon hot pepper sauce (optional)
- 1 teaspoon fresh minced garlic
Montreal Steak Marinade

Combine wine, oil and seasoning Add steaks and refregerate for 1 hour or overnight
- 3/4 cup red wine (Burgundy, Cabernet, or Merlot)
- 6 TBS olive oil
- 4 TBS McCormick Montreal Steak Seasoning (or equivalent)
- 6 steaks (6 oz ea)
