Slow Cook BBQ Pulled Chicken

This slow cooker recipe can be assembled in the morning and ready in time for an afternoon barbecue. Using skinless chicken breasts instead of pork means fewer calories and less fat.

Ingredients
- 1 (14.5 oz.) can no-salt-added diced tomatoes
- 1/4 cup apple cider vinegar
- 2 tbsp. honey
- 1 tbsp. smoked paprika
- 1 tbsp. soy sauce
- 1 tbsp. Dijon mustard
- 1/4 tsp. red pepper flakes
- 4 boneless, skinless chicken breasts (2 lbs.)
- Coarse salt and freshly ground black pepper

Preparation
Step 1
In a 6-quart slow cooker, combine the tomatoes, vinegar, honey,
soy sauce, mustard and red pepper flakes.
Add the chicken and season with salt and pepper to taste.
Cover and cook on low until the chicken is falling apart, about 5 hours.
Serve with your favorite barbecue sauce.
