BANANA BLUEBERRY MUFFINS

Ingredients

  • 1 cup quick cooking rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup wheat germ
  • 1/2 cup sugar
  • 11/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 11/2 cups mashed bananas (make sure they’re ripe)
  • 2 eggs
  • 1/4 cup melted butter or margarine
  • 1 cup fresh or frozen blueberries

Preparation

Step 1

Preheat oven to 375°F.
Combine oats, flours, wheat germ, sugar, baking powder, baking soda and salt in a large bowl.
Stir well and set aside.

In a small bowl, whisk together bananas, eggs and melted butter until well blended.
Add banana mixture to dry ingredients and mix just until moistened.
Gently fold in blueberries.

Spray muffin tins with Pam.
Divide batter evenly between 12 muffin cups.
Bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
