Ingredients
- 2 cup Fiber One Cereal
- 1 cup 1% Milk
- 3/4 cup pumpkin
- 2 tsp pumpkin pie spice
- 1 Egg
- 1/2 cup brown sugar
- 1 1/4 cup flour
- 1 Tbs baking powder
- 1 tsp salt

Preparation
Step 1
Mix cereal & milk; let rest 5 minutes. Add pumpkin, egg, spice & brown sugar. Stir. Add flour, salt and baking powder. Mix together. Spray muffin tin with cooking spray. Bake at 350 for 18 -20 minutes or until toothpick comes out clean. (Optional: Dice an apple or two and add to the mix.)
