Ingredients

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 1/2 T sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground allspice
  • pinch sea salt
  • 1 cup soymilk
  • 1/2 cup canned plain pumpkin puree
  • 1/2 tsp molasses
  • 1/2 tsp pure vanilla extract

Preparation

Step 1

In a large bowl, whisk together the flour, baking powder, cinnamon, sugar, ginger, nutmeg, allspice, and salt.

In a separate bowl whisk together milk, pumpkin, molasses and vanilla. Add milk mixture to flour mixture, stir until just mixed.

If lumpy its ok. If batter is too thick, add a little more milk to thin as necessary.

Heat skillet over medium high heat and lightly grease. Once hot, reduce to medium and scoop 1/4 cup batter onto skillet.
