Oven Fried Zucchini

Ingredients

• 2 med. zucchini
• 1/2 t salt
• 1/2 t pepper
• 1/2 C bread crumbs
• 2 T Parmesan
• 1 T parsley
• 1 egg

Preparation

Step 1

Preheat oven 450
Spray cookie sheet with cooking spray or coat with olive oil
Cut each zucchini into 8 spears
Sprinkle with salt & pepper
Beat egg; dip zucchini in egg then in breadcrumbs mixed with Parmesan & parsley.
Place on cookie sheet; drizzle with olive oil.
Bake 20 min.
