Zucchini and Eggplant Bake

Ingredients

  • 3 med zucchni, thinly sliced
  • 1 large red pepper coarsly chopped
  • 1 large onion, coarsly chopped
  • 1 med eggplant,peeled and chopped into small bites
  • 2 cloves of minced garlic
  • 3 Tbs olive oil
  • 4 eggs
  • 1/2 Cup mayo
  • 4 oz of Pecorino-Romano cheese (1 Cup)
  • 8 oz shredded Mozzarella (2 cups)
  • sleeve of crackers crushed

Preparation

Step 1

Preheat oven to 350*. Grease a 3 qt rectangular baking dish.


1. In a 12 " skillet cook all veggies, add garlic, 1/2 tsp pepper and 1/2 tsp salt over medium heat for 15 min or until veggies tender.

2. In an extra large bowl whisk eggs. Stir in pecorino cheeses and 1 cup mozzarella. Add cooked veggies. spread into dish. Top with remaining cheese and crushed crackers.

3. Bake uncovered foe 20-25 minutes. Let stand 10 min.
