  • 2 cups biscuit/baking mix
  • 3/4 c plus 2 T sugar, divided
  • 2 eggs
  • 1 c sour cream
  • 1 c fresh or fozen blueberries

Step 1

In a large bowl, combine biscuit mix and 3/4 c sugar. In a small bowl, combine the eggs and sour cream; stir into the dry ingredients just until combined. Fold in blueberries.

Fill the greased miffin cups three fourths full. Sprinkle with the remaining sugar. Bake at 375 for 20-25 min or until a toothpick comes out clean. Cool for 5 min before serving.
