Summer Corn Salad with Feta, Avocado & Cilantro

Ingredients

  • 6 ears of corn
  • 2 garlic cloves, minced fine
  • 2 TBSP red wine vinegar
  • 1 tsp ground cumin
  • 4 TBSP extra Virgin olive oil
  • Salt & Pepper to taste
  • 6 oz Feta cheese, cubed
  • 1 avocado, cut into bite size pieces
  • 1/2 bunch cilantro, chopped

Preparation

Step 1

Make the vinaigrette. Add minced garlic, red wine vinegar, cumin & salt & pepper to a small bowl. Whisk in the olive oil & check seasonings.

Cut kernels off of the corn cob & cook in boiling. Salted water for about one minute. Drain.

while corn is still warm, toss with the vinaigrette.

Just before serving add in the chopped avocado, feta cheese & cilantro.
