Crab balls with Lemon-Caper Sauce

Ingredients

  • Balls:
  • Non-Stick Vegetable Oil Spray
  • 1/2 cup Mayonnaise
  • 2 large Eggs, slightly beaten
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 bound crab meat, drained and well picked over.
  • 24 Saltine Crackers, finely ground
  • Lemon-Caper Sauce:
  • 1 cup mayonnaise
  • 4 1/2 tablespoons capers, drained
  • 4 1/2 tablespoons chives, chopped
  • 3 tablespoons lemon juice
  • 1 1/2 teaspoons lemon zest.

Preparation

Step 1

Balls:
Spray 2 baking sheets with nonstick spray.

Whisk mayonnaise, eggs, mustard and Worcestershire sauce in bowl to blend.Gently fold in crab meat and crackers. Roll into 1 1/4 inch diameter balls. Place on prepared baking sheets Can be made 8 hours ahead, cover and chill)

Preheat broiler. Broil Crab Balls until brown and cooked through. Watching closely and avoid burning and turn once, about 5 minutes total time. Serve with Sauce.( Can be served hot or at room temp)

Sauce:

Mix all ingredients in medium bowl to blend. Chill until Cold (Can be prepared one day ahead, covered and chill)
