Savory Beet Soup

This is designed to be made in your Blendtec blender using either the FourSide Jar or WildSide Jar.

Ingredients

• 1 tsp coconut oil
• 1/4 onion, roughly chopped
• 1 clove garlic, quartered
• 1 c vegetable broth, or chicken broth
• 1 c lite coconut milk
• 3/4 tsp salt
• 1/4 tsp ground black pepper
• 2 c beets, steamed

Preparation

Step 1

Heat oil in pan; add onion and garlic, and sauté until onion is tender. Add all ingredients to WildSide or FourSide jar and secure lid. Select “Soups.”

VARIATIONS

Add 1 teaspoon basil prior to blending.
