Orange Cranberry Bread

  • 1 cup chopped fresh or frozen cranberries
  • 3/4 cup chopped nuts
  • 1 Tables. grated orange peel
  • 2 cups flour
  • 1/2 teas. baking soda
  • 1 cup sugar
  • 2 Tables. shortening
  • 1 1/2 teas. baking powder
  • 3/4 cup orange juice
  • 1 teas. salt (optional)
  • 1 egg, beaten well

Step 1

Preheat oven to 350*. Liberally grease 9x5x3 loaf pan. Individually prepare cranberries, nuts and orange peel, set aside. Mix flour, sugar, baking powder, baking soda and salt together. Cut in shortening. Stir in orange juice, egg and orange peel, mixing just enough to moisten. Fold in cranberries and nuts. Spoon mixture into prepared pan. Bake 60 minutes or until wooden pick inserted in center comes out clean. Cool 15 minutes, remove from pan.
