Curried Apple and zucchini Soup

- 2 tbsp butter
- 2 apples,peeled,cored and chopped
- 1 LG onion ,chopped
- 2 tsp curry powder
- 4 cups chicken stock
- 3 cups diced unpeeled zucchini
- 1/4 cup rice
- 1/2 tsp salt
- 1 cup 2% milk
In saucepan,melt butter,over medium-high heat,saute apples and onions for
5 min.or until softened.Sprinkle with
curry powder;cook,stirring,for a few seconds.Pour in chicken stock;bring to boil.
Add zucchini,rice and salt; cover and simmer over low heat until zucchini and rice are very soft and soup is slightly thickened.Blend until smooth.
Add milk;heat through.
