Sesame Garlic Chicken & Squash

Ingredients
- 2 chicken skinless breasts cutlets
- 1 zucchini and 1 yellow squash
- 1 medium onion
- 1/4 cup olive oil
- 1 egg
- Bread crumbs (or crushed almonds)
- 1 package Pantry Club Gourmet Sesame Garlic Dip Seasoning

Preparation
Step 1
Preheat oven to 400 degrees. Working one at a time, place chicken cutlet between two layers wax paper 9 or plastic wrap). Optional: with meat pounder, pound chicken pieces to flatten them.
In shallow bowl (large enough to dip in chicken breasts) mix together 1/4 mix and bread crumbs (or crushed almonds) and set aside.
In separate bowl, whisk 1 egg. Dip chicken pieces, first in egg mixture, then breadcrumb/sesame garlic dip seasoning mix. lay chicken pieces onto greased baking pan. Bake in oven for 15 to 20 minutes.
Slice 1/2 zucchini into semi-thin round slices, then slice 1/2 yellow squash into semi-thin slices, cut 1/2 medium onion into round slices the then in half; set aside.
Heat 1/4 cup olive oil in large saute pan on medium-low heat. Place slices veggies into pan, stir veggies together covering them evenly in oil, pour remaining seasoning over veggies. Stir constantly on low heat for 10 minutes. Serve with chicken.
