Mashed Potatoes Biba

Wonderfully decadent mashed potatoes with whipped cream and gruyere cheese mixed in! You can't go wrong!

Ingredients

  • 6

    baking potatoes (about 3 lbs)

  • 1/2

    stick unsalted butter softened

  • 3/4

    cup milk warmed

  • 3/4

    cup chilled heavy cream

  • 1

    cup grated gruyere cheese (about 3 oz)

  • 3

    TBS grated parmesan cheese

Directions

Preheat oven to 400 degrees Wash potatoes and prick several times. Bake potatoes on oven rack for 45 mins to 1 hour until easily pierced with fork. Halve potatoes lengthwise and cool until they can be handled. Scrape out potato flesh and put through a ricer in batches, set over a bowl. Add butter and milk and stir until smooth. Spread potatoes in a shallow 3 quart casserole dish (spray with Pam first) Increase oven temp to 450 degrees In a bowl with an electric mixer, whip the cream to soft peaks and fold in the gruyere. Spread cream mixture evenly over potatoes and sprinkle with parmesan. Bake until heated through and topping is golden brown, about 10 minutes
