Potato Salad with Kielbasa

Ingredients
- 2 1/2 pounds new potatoes, cooked until tender + drained
- 1 small red onion, thinly sliced
- 1 small yellow pepper, seeded and chopped
- 1/4 cup fresh dill
- 1/3 cup mayonnaise
- 1/4 cup mustard
- 1 tablespoon horseradish
- 1 pound kielbasa or turkey kielbasa, cut into 1/4-inch rounds
- fresh dill for garnish

Preparation
Step 1
After the potatoes are cooked and are hot, but easy to handle, cut in half (or desired size) and place in large bowl with the onion, pepper and chopped dill. In a small bowl, whisk together mayonnaise, mustard and horseradish. Pour over potato mixture and let stand for 1 hour. Fold kielbasa into salad. Garnish with fresh dill.
